@alitria thanks for the suggestion! I agree that a lot of crock pot recipes are way unhealthy. That's why I was in a rut! I'm going to make Italian sun dried tomato chicken tonight it's sun-dried tomatoes, chicken, basil, mushrooms and olives. And I'll probably add some steamed broccoli.

@likeabel that sounds delicious. I've made something similar with those ingredients except it had cannellini beans instead of olives, but I love olives and so does my son. I'll definitely have to try that version! Do you use only one particular type of olives or whatever you have? I sometimes buy this Mediterranean mix of olives off the salad bar at my grocery store that's a mix of all different types and I bet it would be delicious in that! I rarely buy them because I just end up eating them as a snack with hummus but if it's for a recipe, it would be ok to splurge.

The recipe just said sliced olives so I just bought some good old black olives but buying better ones would probably be worth it. DS also loves olives! The recipe is: 2.5 oz sliced olives 3 oz julienned sun-dried tomatoes (not oil packed about 1 cup) 1/3 c roughly chopped basil 8 oz sliced mushrooms 4 chicken breasts (1 pound)
mix it all together and cook of low for 8-9 hours (which seems rediculously long to me). I doubled the recipe and did chicken thighs instead because I think they hold up better in the crock pot. It's been cooking 4.5 hours on low and the chicken is done. It at least smells good! I'm going to freeze 1/2 of it to eat in June!
All you ladies still making meals inspire me! Tonight I just grabbed something in a box, tomorrow will probably be something in a box too... I have officially hit a wall I think.
@Tawny87 I have some nutritional/digestive restrictions totally separate from pregnancy and when I ignore them for more than a couple meals in a row, my body makes me regret it. When I'm pregnant, that's just intensified. I don't know that I have any strong intrinsic motivation but the combination of knowing I won't be getting paid for a few months in the very near future and knowing that I'll be doubled over in pain if I don't make myself real food keeps me going. Of course, sometimes cooking is the one thing I do and everything else in my house just gets to wait until it's a two chore sort of day.

@likeabel I have tried a couple of things off the Eating Well site for crock pot chicken thigh recipes. I'm not as good about healthy good as I should be, but a lot of the crock recipes scare even me with the nutritional content.
