What's for dinner this week? (4/24)

Tonight we are making Mexican cheese dip. Totally unhealthy but so good!

Rest of the week:
Chicken stir fry
Burritos
salmon cakes
Hamburgers

    This thread is perfectly timed.  I'm trying to make our meal plan now and we've only got five days:
    Veggie tacos (carrots, cauliflower, broccoli, cheddar and black beans in corn tortillas)
    Tofu curry
    Breakfast for dinner (eggs, hash browns and some vegetable)
    Rice and beans
    Arugula and parmesan ravioli (Trader Joe's)

    No ideas for the Saturday or Sunday.  We'll probably order or go out to eat at least once during the weekend.  Does anyone know of a good veggie dish that would work for "breakfast for dinner" day?

  • I've been feeling insanely guilty about my eating habits (or lack of eating as much as I should). Tonight I made an amazing dinner because we bought a little grill and it was the first time I felt good about what I ate and how much! It was delicious too, meat is way better on the grill. It was grilled marinated steak, sautéed onions and mushrooms, salad, mashed potatoes and a Mac salad.

    Tomorrow we are having teriyaki chicken stir fry over jasmine rice (Sugar snap peas, broccoli and red peppers with chicken cooked on the grill)

    Breakfast dinner Tuesday-Scrambled eggs with goat cheese and roasted red peppers, toast and bacon with tiny pan fried potatoes 

    Wednesday will be black pepper sirloin with asparagus and what my kids call "decorate your own potato". I make baked potatoes with a bunch of fixins and they "decorate" with what they want 

    No idea on Thursday and Friday yet 
  • @ladyshark311 Baked potato night used to be my favorite dinner growing up. I later figured out that's what my mom used to clean out the fridge ;)

    monday- grilled BBQ chicken and Mac and cheese
    tuesday- shrimp scampi with spaghetti
    wednesday- out
    thursday- honey BBQ turkey meatloaf, mashed potatoes and broccoli
    friday- pizza

    i don't plan the weekends, so not sure about Saturday or Sunday yet.

    T-pasta puttanesca with a vegetable or salad
    W-slow cooker quinoa stuffed peppers
    TH-pizza!
    Fr-chickpea salad sandwiches and fries
    Sat-out to dinner

    Mon Baked tortellini with salsa 
    Tues/Wed Asparagus casserole (asparagus season is officially here so there will be LOTS in the next few weeks) 
    Thurs /Fri Sweet Potato chili 
    Weekend is too far away to plan, so will make DH decide when he's home ;)

  • I only have a few meals planned for this week...

    Smoked BBQ chicken with mac & cheese and kale + brussels sprouts salad
    Broccoli Rice casserole (made with greek yogurt instead of cream of whatever) and chicken sausages
    Portabello mushroom pizzas
    Balsamic roasted brussels sprouts with bacon

    I'm trying to work on my portion sizes this week, I'm a little worried about how quickly I seem to be gaining weight  :#  Kind of mad at my husband for buying the prepared mac & cheese at Costco ... so impossible to eat just a little of!   I'm not really a casserole person but I have broccoli to use up and I already made a bunch of rice for another recipe ...if anyone has healthier ideas for those ingredients I'd appreciate suggestions!

  • All I can think of are hot wings after DH bday lunch yesterday. We have leftovers in the fridge and it's taking all my willpower not to eat them for breakfast. I have a feeling I will be getting more sometime this week. I will have to look at this later for inspiration. I have a one track mind right now.

    Wednesday:  Pulled Pork Sandwiches and Asparagus
    Thursday:  Fritos Taco Bake with Salad
    Friday:  Pizza on the Grill with Pesto, Sausage, Mushrooms, and Onion

    I try to get veggies in each meal, but don't always succeed.  When salads are the fall back veggie, sometimes it just doesn't happen...lol

    Friday:  Out with the kids for dinner.

    Sunday:  Big family dinner at my house for Greek Easter---Au Gratin potatoes, Squash Casserole, Salad, Rolls, and Ribeye Roast and lots of desserts :smiley:

    Tonight, we're having a sweet potato, kale, and goat cheese frittata, if that's up your alley. It's pretty delicious and meat-free, because I still can barely stand to cook meat these days.

  • All of these menus are making me hungry!

    Monday - beans + greens
    Tuesday - tofu/greens stuffed shells w/ red sauce
    Wednesday - leftovers
    Thursday - Birthday dinner! Woo hoo! 
    Friday - Lentil + grilled vegetable salad with blue cheese
    Saturday is our last day off together for about a month (yay opposite work schedules) so we'll probably get something out or to bring home

  • I feel like such a crappy wife. I haven't cooked in over three months. Now that I'm feeling better, I need to get back into it and start cooking again, but I feel like I don't know where to start. Which is funny, because I've always been a great cook and really inventive. I think I'm stuck in a rut. It doesn't help that my hubby is a picky eater.

    Just venting. Guess I better go grocery shopping and come up with some menus... thanks for the ideas, Ladies.

  • Anyone have good recipes for kale?? I love kale but not raw, my family probably won't eat it and the only way I've had it is in soups. Would love some easy yummy recipes!
  • @ladyshark311 Do you like collard greens? I know a lot of people cook it the same way as they cook collard greens. I'm intrigued by the idea of cooking it like a creamed spinach. I usually cut it up really fine and mix it in with my salads for a crunchier texture, because I don't typically like it raw either. Or saute it with some olive oil, shallots and garlic... and bacon...

  • @Julia70286 I do love collard greens but I've only had other people cook them for me! Lol I have no clue how to properly cook those either and I'm a pretty excellent cook!
