I have been craving pesto everything lately so tonight we are having bow tie pasta with homemade pesto, sun-dried tomatoes, parmesan and grilled chicken. Also Caesar salad!
We're doing take-out but I cook most nights. Would love to hear some new ideas too though - maybe we could start a weekly thread?
I've been trying to make more fast & easy dinners. Melissa Joulwan's "hot plates" concept from Well Fed have been great. The basic idea is to precook meats and veggies on Sunday, then combine, heat and add a little extra (sauce, herbs, etc.) when it's dinner time. This Sunday I grilled fajita chicken and roasted squash, zucchini, onion and bell pepper. Threw it all in a skillet last night to reheat, added a squeeze of lime and a few dashes of hot sauce, then topped with fresh avocado. Healthy dinner in about 10 minutes and there are tons of combinations meat + veg that work!
Tonight's dinner will be pretty good! We are having salmon, rice pilaf & roasted broccoli. Last night, on the other hand, I was a total slacker...we had frozen pizza.
I'll be having leftovers from last night -- I made a version of this red pepper pasta sauce from Pioneer Woman, which is one of my favorite quick and easy recipes! I add sauteed chicken and mushrooms to mine, and also dump in a bunch of spinach at the end (see, it's a healthy pasta!).This stuff is good, DH loves it, too.

I think tonight will be leftover pesto chicken over cauliflower rice with asparagus on the side. But, I'm really craving mexican. @megframe16 I blame your post for this! Taquitos sound delicious, as does chips, salsa, and a big bowl of queso. Oh and fajitas and enchiladas.
