What's for Lunch?

I hate lunch.  I never know what sounds good and what to eat.  I bring my lunch to work almost every day, but I struggle to find yummy, healthy lunch ideas.  I've tried Pinterest but to no avail.  For the last 2 weeks I've had a craving for bagels and cream cheese, so I've been bringing that along with granola bars, yogurt, and fruit but now I'm sick of it and I need to go to the grocery store tonight.

Basically what I'm saying is, I need an adult.  What do you ladies eat for lunch?

Re: What's for Lunch?

  • Usually I have leftovers from the night before. Lately I've been craving Kraft dinner (Mac and cheese) so I've had that quite a few times. Maybe try some soup?

  • I normally cook something new each night and then take the left overs for lunch the next day. However, lately due to the nausea and exhaustion I've been super lazy. I made a giant pot of chili last week (I love chili!) but I could only stomach 5 bites then had to be done. So we have a lot leftover and H gets it for lunch at least twice this week. Today I'm having leftover pizza. :/ Yeah, not a healthy option...My mom made tons of food for Easter and we got to take a bunch home, so we'll be eating ham and scalloped potatoes for lunch/dinner at least once this week as well.

So, I'm in the same boat as you @shallowseas - needing some ideas and motivation!

  • 99% of the time I have leftovers. Other days I may have a sandwich, some sort of freezer microwave meal or grab takeout.

  • Generally leftovers. I figured I'd have some good leftovers from yesterday, but nope. So I'll be having a hot pocket today.
  • I take leftovers when I can, but unfortunately we've been eating out more than in lately. Usually nothing we have sounds good or makes my stomach churn thinking about it, and I've been craving a certain salad and sandwich from McAlister's Deli almost every day, so that's where we've been eating a lot   :\

  • I usually have leftovers. Today it was leftovers from Easter (ham, asparagus, cheesy potatoes). The ham is not sitting well though, but give me all the potatoes. I also packed a salad for later and some hard boiled eggs. Earlier today I got peanut M&Ms from the vending machine. I always leave Larbars and pistachios at my desk. Basically I pack a lot so I have options.

Another leftovers gal here.  DH and I very rarely eat out,  so 99% of our meals are cooked at home.  We always make enough for both dinner &  lunch. That said,  my favorite way to pick my meal choices (especially when we're feeling indecisive)  is to look at the menus of restaurants we would eat at if we were going out... We pick a dish,  then Google "copycat recipe" with the name of the restaurant and the dish.

Some of my favorites are the copycat chicken gnocchi soup (olive garden) and the copycat burrito bowls (either Chipotle or qdoba)

  • Ooooohhhh I've been craving Cheesecake Factory's Cobb salad lately, we are planing on doing a copycat recipe of that this week. So stinking excited!
  • Ditto on the leftovers, I work 10-11 hour days so all my dinners get made in the crockpot and then packed as lunch the next day, when I don't bring leftovers I usually run to Wawa and get a wrap.

Honestly, the crockpot saves my life and we've found some great freezer recipes that we just bag, freeze, and dump in the morning.

  • Grilled cheese and tomato on sourdough.

Followed up by raspberry sorbet and mixed Cheetos. I'm THAT type of pregnant woman.

Last pregnancy, around 9 weeks I made a turkey, stuffing, crab dip, gravy, cream cheese, cranberry sauce sandwich out of thanksgiving leftovers. Shit was good.
  • @homeydontplaythat - This made me laugh out loud!! Crack me up!!  I do the same thing.  The other night we were at a hockey game and I saw someone with Dunkin cup. I was craving Hot Choc and Popcorn. - who does that???  I got the popcorn but skipped the Hot Choc line was too long. =) My last pregnancy I made a big dinner too couldnt wait to eat it
  • I made a Chicken Ceasar Pasta Salad that I saw on Tasty. Nom.
  • We usually do leftovers, tuna, or hot dogs. Sometimes sandwiches if there's bread and meat around. But after reading through this thread, I'm ready for some funeral potatoes and McAlister's Shrimp Ceasar salad!

It's so hard when some days things sound/smell terrible and the next day it's what you're craving.

  • Everything sounds terrible right now, and I run an in home daycare so I need to make something for myself and the kids.  I'm staring at the fridge trying to force myself to decide.  At least they are busy with imaginary play and getting along during it(!!), so I have a little space to decide.

  • My favorite lunch is what I call a mash it up. A whole avocado, what ever veggies are in the fridge sliced up (tomatoes, asparagus, peppers, etc), a chunk of good cheese (Gouda, manchango, feta, etc) and hunk or good bread (pumpernickel, challah, etc) and some soy sauce for the avocado and a piece of fruit. It's really basic but always satisfying. The better the ingredients, the better the lunch. It covers all the food groups. You can also add some good nuts. It's also perfect for work because it doesn't need heating or refrigerating and it doesn't smell. People at work used to tease me but now everyone brings their lunch like this! It's also super healthy.
  • Great lunch today - strawberry spinach salad and a pimento cheese sandwich with fried green tomatoes. :-)
Most days it's either leftovers or a veggie sub from cafeteria at work.
  • I broke lots of pregnancy rules today and had caesar salad and a cold turkey avocado BLT. It was delicious. I regret nothing.

  • Can you eat the same thing for a few days or do you get bored?  A favorite thing of mine is to saute garlic, tomato, spinach and/or arugula & asapargus (i usually pre steam the asparagus in one of those ziplock microwave bags), add italian seasoning then either cook shrimp in it or add a shredded rotisserie chicken.  If you eat pasta you can also add a little bit of pasta & a few spoonfulls of pasta water to add more "sauce".  I usually put in whole wheat rotini.  It is mostly veg and protein with a hint of carb to make it feel less "healthy".  I sprinkle it with parm before eating.  I also add red pepper flakes because I like spicy.

This is a great pretty quick almost 1 pot dinner and reheats really well for lunches.

  • @MrsBinPA  I can usually eat the same thing for about a week until I get bored with it.   That sounds pretty good.  I may have to try it :)

  • Scrambled eggs is my favorite thing right now and the only thing that doesn't make me feel yucky. But some avacado toast is sounding rather delicious right now
  • I've been bringing fruit that I snack on when I'm hungry. But usually at some point I convince one of my work buddies to go get lunch for himself and pick up something for me. Which is suddenly getting harder since realizing that the baby has no interest in cheese.
  • Today I had rice from last night, cereal, and some kumquats. I already feel like I won't want to eat dinner.
  • A chocolate chip muffin from Speedway. Not my proudest moment.

  • @ShallowSeas I love it!  "I need an adult."  I struggle with the same things.  I've always been a bigger fan of snacking than I have of big, sit down meals so sometimes that's how I pack lunch.  I bring a lot of little things.  For example today, 1)a banana 2)can of mandarin oranges 3)black beans from the can (apparently we're supposed to eat a ton of protein but no deli meat HA!) 4)cheese stick 5)some almonds 6)dried cranberries.  I'm with you though, I check out pinterest too but I'm not a huge fan of chicken or hummus and those are almost always the top ingredients on pinterest lunches.

  • Mac N Cheese and chicken noodle soup! I had to toss what I brought, it made me gag just thinking about it.
