GTKY: Easter Meals

Well....maybe a little less Get To Know You and a little more HELP ME!!  I don't know what to make for Easter this year.  I hate ham...hate it.  Last year I had to go to husband's family's house (but not this year HOORAY!!).  Year before I did brunch bc husband had to work the night shift.  Anyway, what do YOU make?  Hopefully someone else's dinner will sound good to my food-aversion-laden self and I will just copy you :hushed:

  • I LOVE brunch for Easter! No matter what time of day, brunch is where it is at.

    Easter has always been a tough holiday for me because it used to be the holiday I would spend with my father since my mom had Christmas. We never did anything really special for it and then when I no longer saw my father, my mom wasn't sure what to do either. When I was about 16, I started making a huge brunch spread for just me and my mom (my sisters still chose to see my father) that we would enjoy after church. We had waffles and casserole and quiche and fruit. It was awesome!

    For the past few years, I spent Easter with MH's family and they always had ravioli, roasted lamb, spiral ham, and pizzagana (whoa, have no idea how to spell that one!). There was antipasto and pasta primavera, a million different salads, and more desserts than I could possibly even mention. It was a true feast and there were over 100 people there. 

    This year, we are going to my BIL and SIL's house. It is just going to be MH's immediate family. I feel awkward because my SIL is Jewish and keeps asking me what people will expect to eat and I honestly have no idea. She was asking if she really had to do a ham because that makes her uncomfortable and I reassured her that she shouldn't feel pressured to make anything specific. I think she is going to make a roast chicken and some pasta dishes, but she is still really unsure and I wish I could just offer to host, but there is no way. Even though it is just MH's brothers and sisters, the total number will be almost 20 since MH has 5 brothers and sisters and all of them are married with children. I offered to bring my spinach ravioli, which is pretty ballsy considering I am the least Italian of the group, but they are really quite delicious. 

    Basically, I think Easter is one of those holidays where you can really make whatever you want. Ham and lamb are the more traditional choices, but I know some people who do a seafood dinner with boiled lobster and fish. Others will stick with more traditional spring-time ingredients like veggies and roasted chicken. It is totally up to you and I am excited about possibly starting a new tradition with our little family next year where I can completely choose the menu and go back to the good ol' brunch all day!

  • We are ham people. However, I've been to Easter dinners that serve lamb, prime rib (SO good), fish, and even turkey or roast chicken. Given the choice though I'd make brunch stuff regardless of what time of day it was being served, just because I love it!

  • @laurenmdrn16 I love brunch too, maybe I'll just stick with that and that can be our tradition.  I can eat breakfast no matter what time of day it is ;)

  • My family is Italian, so in true Italian fashion we always have lasagne, homemade ravioli, pasta, meatballs and braciole. We usually have a ham too. 

    This year a lot of the family will be in other locations for Easter so we're having brunch with my dad at this farm-to-table restaurant. It'll be a new experience! And who has brunch without mimosas?! Ugh. 

  • THIS! I was so bummed because my sisters invited me out to brunch, which was super nice since I love me a good brunch, but then I realized I couldn't have a mimosa. So my younger sister (bless her heart!) said "Well, you can just have a virgin one!" So, orange juice. I can have orange juice. Thanks.

  • We're just doing dinner with friends this year. The only family in town on either mine or DH's side is my Mom and she spends Easter with my step-dad's kids. I'm doing bbq/Italian chicken on the grill, old fashioned macaroni salad, my bestie is making a veggie side and dessert. Pretty low key here.

  • My dad is from Cuba so we usually do a typical Cuban holiday meal, roast pork, black beans and rice, plantains, yucca, and flan. But this year we are renovating so we are going to our favorite neighborhood Italian restaurant for an early dinner. So excited to not clean up this year. 
  • We are making lamb, asparagus, rosemary potatoes, and a salad. My parents are from the Midwest and not very exploratory with their food, so my dad is now scared of this easter dinner. If my mom were making it we'd be having ham, mashed potatoes and rolls. Time to spice things up a bit!
  • We are Italian and having a traditional Easter dinner of antipasto, lasagna, roast pork loin, stuffed mushrooms, potatoes and string beans.  Usually lamb would be served too but I am hosting this year, and well, just no.  I can't.  :s LOL

  • Also having lamb over here. Not a big fan of ham and I can't handle poultry when pregnant. We will also have pastichio (Greek lasagna) and asparagus. 
  • Loving this thread as I am completely stuck on what to make. DH and I have never spent Easter together (except for last year when we were in Jamaica for our wedding), and I have no clue what to make. I hate ham unless its in a sandwich. His stomach cant handle lamb. We are going out for brunch after mass,  so I am thinking of making these pull apart sammies for dinner, along with scalloped potatos and asparagus

    Now, does anyone have an easy scalloped potato recipe? I dont have a slicer, so not even sure if I can make any form of this dish without slicing the potatos?

  • Unfortunately we aren't doing anything this year other than a big fat maybe going to the K&W and ordering their Easter dinner special when we go through the line.  My mom usually has Easter dinner at her house, but not this year since she is busy preparing for the baby shower next weekend and does not want me at the house before that time.

  • Lamb crown roast or some other version of lamb is our traditional meal for Easter but we aren't having the usual get together.... My sister has been busy helping her husband w/ custody issues regarding her step daughter (what a nightmare) and I'm just to big and tired to try to host it myself this year.... So it will be just me and the hubs doing something low key. I'm leaning towards pancakes!!
  • Growing up we always did lamb. DELICIOUS! 

    DH's fam is very Italian and does the traditional giant feast of ALLLLLLLLL of the food, which is also awesome. It will be the first time in years that we aren't spending Easter with them since we are going there for a shower the week after, so we get to do whatever we want! 

    I'm doing banana coconut muffins (have bananas that are about to die if not made into a smoothie or muffin), monkey bread with marmalade butter, leek and asparagus frittata, fruit salad, champagne punch, and candied bacon. The only things I'll cook on Sunday are the frittata and bacon. Easy peasy.


  • I always do a nice lamb roast for Easter for Myself, DH and his kids but this year we are feeling lazy.  We decided to just do some bites and nibbles like a cheese board, dip and veggies...maybe some chicken skewers and a Key Lime Pie for dessert. Not quite traditional but too bad.
