NBR - potluck help

So we're planning a "spring potluck" at work next week and I'd like to bring something, but I always end up bringing dessert.  This isn't normally a problem, but there are already several desserts on the list.  What is your go-to potluck item?  I'm looking for something relatively easy to make that won't take me hours.

Any suggestions?

  • Meatballs! Throw them in a crockpot with the sauce and they can simmer away until you're ready to eat. Alternatively, a salad (pasta or regular), caramel apple dip..
  • Loading the player...
  • Homemade hummus and some nice crackers or pita.  It takes no time to make and it's actually better a day or two old so you can make it ahead of time and just grab it out of the fridge when it's time to go.  There are lots of more "fancy" recipes out there like roasted garlic or pumpkin.
  • A dip is always popular - hummus was already said or spinach artichoke is always a favorite. I also have a delicious white bean pepper dip which is awesome. Quinoa salad would be appropriate for spring. Or fruit salad is easy and spring appropriate.

    I love making non-lettuce salads for potlucks, which are always popular. Some of my go-tos are California couscous & orzo salad. So easy to make & really tasty!
  • I always make loaded baked potato salad for our work potlucks, but it is kind of time consuming

    Agreed on the dip. Potlucks are my jam but if I don't feel up for cooking, I have this go-to dip recipe, I just throw everything in a food processor:

    8oz Cream cheese  (1pk)
    1/4 cup Blue Cheese, crumbled
    5 strips of cooked Bacon, diced or crumbled in the processor
    1/2 cup Green onions sliced with the white part
    1/4 or less Diced pimentos (drained)
    1 cup of Cheddar cheese 

    It's simple and you only have to cook the bacon or buy those bac'o bits at the store I guess.

    ETA: you can skip the pimentos if you'd prefer. Sometimes I also like to add slivered almonds.

  • My favorite thing to bring is a macaroni salad, with tuna and cubed cheese. Or you could do Jello salad. Super easy, you just need to prepare it ahead of time so you can let it set overnight. 
  • 3 bean salad or tuna pineapple pasta salad. 
  • My go to is panzanella , its an Italian bread salad.  Super easy to make and always popular.  Its basically day old or toasted crusty bread (like ciabatta), tomatoes, olive oil, shallot, garlic, basil, and dijon.  There's tons of different styles if you google 'panzanella recipes'.

    I love doing mozzarella balls with tomatoes and basil on mini skewers with balsamic on the side.  Or if I'm short on time, I'll buy tabouleh and pita bread and make the presentation nice.

    Nov16 Siggy Challenge: 

  • The recipe that always gets spoken for first at my work is Hashbrown Casserole (or funeral potatoes or any of the 100 other names it goes by). Basically just bagged hashbrowns, cream of chicken soup, sour cream and cheese. Mix it all together and throw it in the oven for about an hour!
  • Lasagna's are pretty easy to make ahead and heat up the day of, as long as your work has an oven in the break room I guess. I also agree with PP's dips are always awesome. My go to dip is a garlic artichoke dip, can't find the recipe right now though.

  • Taco dip - mix 8 oz. cream cheese with 1 T. mayo and spread in the bottom of a pie plate.  Dump a jar of salsa on top and spread it out.  Top the salsa with 8 oz. shredded cheddar.  Garnish with black olives, diced onion, chopped bell pepper and/or avocado.  Or don't garnish at all - it honestly depends on what I have on hand when I make it.  Serve with tortilla chips.  Easy and delicious!

  • I second the meatballs! Super easy in a crock pot. 
  • I am always a dessert person too bc I love to bake! I also often bring a spinach dip or pull apart Italian cheese bread 
  • I'm lazy and buy things. Veggie trays, drinks, cups/plates/plastic ware.

  • Thanks ladies.  Now I'm off to research dip recipes.  I do love a good spinach and artichoke dip!
