My birthday was this past weekend, there was no way around it. We went out with a couple close friends (all of whom knew we were trying) and I told them all before hand. They would have known the second that I didn't have a drink on my birthday that I was pregnant.
If your in someone's home just "fake" sip and when no one is looking throw some in the sink OR prepare your own mocktails.
If you're out pull waiter aside and ask them to bring you a mocktail and not say anything when they bring it to you. You can do this by going to the restroom and pulling them aside...I just did this this past weekend for DH's BDay. Once we were at the bar I just went up alone and ordered myself a mocktail and no one was the wiser.
We're having my husband's birthday party at our house this weekend. He'll just make me mixed drinks with no alcohol in them. I'm sure people won't pay attention to what he is making for me.
tricky since you'll be the guest of honor. When I was KU the last time around I could fake it at the bar with a club soda and lime. But if people are going to want to buy you drinks you might need an excuse. You could also say that you're TTC. Or could just be honest!
So we have the exact same situation coming up. My 30th birthday party is in 2 weeks. Had the same situation happen with DD#1 but we had a party at our house. I emptied beer cans and filled them with water. Hid them in a special place in our fridge. No one knew. This time we are going out. I plan on drinking "vodka/soda" aka sprite with lime. My girlfriend who knows we are PG will be handling it at the bar for me. Since we were prepping for IVF most of our really close friends already know we are PG. When they are all involved in supporting you through those hard appointments, you kind of have to tell them there aren't any more appointments to prep for. I'm not into lying, so if someone straight up asks me I'm going to tell them. But I'm going to try to hide it first.
Most bars serve a non alcoholic beer. Last time around I grabbed the waiter and said I would be ordering Miller Lites but needed him to bring me O'douls and he simply said "say no more" and I hid it from 20 coworkers at my own going away party.
ETA I was kind of a lush before I got KU so it would have been super obvious.

Re: How to celebrate my birthday (7 wks preg) without everyone knowing I'm preggers?
You could say you're on a new diet that you aren't drinking on or maybe you can just "pretend" drink (have a drink that looks alcoholic)
