Here's what we've got happening this week, in no particular order - linguine in garlic sauce with spinach - chipotle cheddar pork - BBQ chicken pizza - apple cinnamon pancakes - chicken orzo skillet
The only thing i know I'll be cooking is mexican chicken stew. That will probably be happening tomorrow. DH has got the rest of the week because he stays home.
Actually he has to work on wednesday so that will probably be taco pasta night for me and DS. Or annies mac and cheese, we'll see how I feel.
Tonight - what was supposed to be last night's dinner but was delayed - chicken souvlaki, pita, and tzatziki. Tue - leftover chicken, baked spaghetti squash with cheese Wed - coconut chicken curry (holy chicken, I might need to branch out here) Thu - always our BFD night (breakfast for dinner) Fri - leftovers Sat - takeout noodle bowls, birthday cake. It's just me and DD for dinner this week, so I'm going to rock leftovers/random stuff/take out a couple days for sure .
Besides the lasagna I made last night, the only things I'm actually making are: -One Pot Cheeseburger Skillet (thanks for the recommendation @spacepotatoes ) -Crazy Breakfast (basically an omlet with homefries already in it)
Oh, quick note. For the Knorr recipes, I usually double the packages. One doesn't make enough. Or I make my own version of the side since they're not always the most healthy. But they can be convenient!
This is what we have planned, although things my change based on how I'm feeling
Tonight: vegetable fajitas with Spanish rice (although I'm really craving some pizza so we may be ordering that) Tuesday: Bertoli Chicken Florentine and Farfalle and garlic bread Wednesday- Breaded chicken and mashed potatoes Thursday - Lasagna and garlic knots Friday - Date night. We go out to eat...not sure where we're going this week Saturday - Probably a salad and some french bread.

All of your responses are making me realize how boring my husband and I really are. He is really trying to lose some weight and get healthy before the baby arrives so he likes to have a big salad as most of his meal. Every night. I am vegetarian, he is not. He puts grilled chicken on his, I put avocado, hard boiled egg, seeds and nuts on mine. I make vegetarian meals that reheat well to split into small portions to have for two, three or even four nights along with the salad. This is what our week looks like:
We are vegetarian also :-) I have been craving fajitas and may make that tonight (leftovers for lunch tomorrow). Also will probably make a pasta at some point, and possibly a pizza/flatbread or a noodle dish.
Husband's cooking tonight since I have clinical skills. Probably fajitas or spaghetti. Tomorrow I think I'm going to make salmon with chive sauce. Wednesday, it depends. If I get good news, I'm going to make one hell of a meal to celebrate, probably tournedos flambés (sounds far more impressive than it is, but it's a favourite) and asparagus and the whole shebang. If I get bad news, we're having poutine because it's comfort food and I probably won't feel like cooking.

My brother is visiting us this week and we're going away over the weekend. We will likely be eating out quite a bit. Monday- Dinner at my MIL I think she's making Lasagna Tuesday- Lemon chicken & angel hair pasta Wednesday- Taking my brother to "wing night" at H's favorite pub Thursday- Steak, potatoes, veggies Friday/Saturday/Sunday- We will be away and eating out
Monday: Chicken Fajita Pasta Tuesday: Cilantro-Lime Honey Salmon, baked sweet potatoes, and broccolini Wednesday: Shredded salsa chicken tacos and kale salad Thursday: Asian Jalepeno Chicken and rice
I cook in batches on Sundays for the upcoming week and just choose whichever for my meals that day. Cooking in batches works better for me as I have no motivation to cook during the week. Here's this weeks menu:
Lunches/Dinners - Garlic Chicken and Veggies Pasta Baked Chicken with Green Beans, Turnip Greens and Cumin Sweet Potato Fries Chicken, Mushroom and Brown Rice Casserole (light on the rice, with Purple Hull Peas and lots of cooked Broccoli Greens mixed in)
Snacks -Chopped Veggies with Hummus, Cuties, Multi-grain Crackers and Kashi Honey Almond Flax Granola Bars

Ok, here's the linguine recipe. This one is also new for me but I have made a similar one before with shrimp and it was really good. I plan to go heavier on the garlic because otherwise, it's not much of a garlic sauce!
Linguini With Garlic Cream Sauce 12 oz linguine 1/2 lb bacon 5 cups baby spinach 1/2 cup chopped onion 1/2 tsp minced garlic 1-1/4 cup milk 8 oz package cream cheese, cubed 2 tbsp butter 1/2 tsp salt 1/4 tsp nutmeg 1/4 tsp pepper 1/2 cup toasted pine nuts
- cook pasta according to package directons - cook bacon over medium heat until crisp and remove to paper towel to drain, reserving 1 tbsp drippings - in drippings, saute spinach, onion, and garlic until tender - add milk, cream cheese, butter, salt, nutmeg, and pepper. Stir until smooth. - stir in pine nuts and bacon. Heat through. - toss pasta with sauce.
I'm vegetarian too! Ovo-lacto, though I don't eat much eggs or drink much milk because they make me gassy However I am ALL ABOUT cheese and yogurt! And butter.
I don't plan things out in advance typically, though it might be good to start doing that looking down the road at life with a child.
I made an amazing West African style stew yesterday with onion, garbanzo beans, kale, tomato paste, peanut butter, and veggie broth (it's SO GOOD). I'm probably going to have some falafel (frozen from TJ's) with beet-feta salad for dinner tonight, perhaps with a glass of kefir to get in a little more protein!
We just got a dog over the weekend so my meal planning for this week has not been good.
Monday - Chili/Chili dogs Tuesday - Leftovers (we have tacos, chili, stuffed peppers, corned beef and cabbage) Wednesday - ? Thursday - ? Friday - ? Saturday - ? Sunday - Ham and cheesy potatoes with asparagus.
I have a lot of meat in the freezer so I will just have to look and pull something out tonight for tomorrow. Maybe I will make something with shrimp or cod.
DH took over the meal plan for the week. White chicken chili tonight Then in no particular order: stir-fry lemon pepper tilapia baked chicken with broccoli and couscous and probably going out one night this week. We'll see.

We have a pretty regular rotating menu which involves homemade low-calorie bulk and then high-calorie sides for me to add on to my portion.
This week: M: Roasted butternut squash soup, side of avocado slices and cous cous T: Bacon potato soup (broth-based) W: Our take on Italian caponata with caprese salad Th: Roasted spaghetti squash with sautéed onion and bell peppers F: Snack night! We make a meal out of Ritz and Merlot cheese, caprese salad, and random other easy sides. Sa: Naan pizza night
