How are you feeling: Feeling ok. Still getting over whatever this cold/flu things was, but GD wise I'm doing alright.
Rants/Raves: Numbers have been mostly good (aside from when I disregard any semblance of balance), though my nighttime numbers are creeping up. They still aren't past the cutoff, but I suspect Glyburide will be in my future. That being said, we are going to a birthday party this weekend and I don't plan on skipping cake! I'll just eat some protein before we head over and then indulge a bit.
Food: No brilliant ideas this week. Making standby stuff that I've made in the past (Stuffed peppers, steak roll-ups, lemon feta chicken, etc.). I could probably use some snack food variety though. I tend to get stuck in a rut.
GTKY What do you have to do before LO arrives: Everything! I've been so much more laid back about it all with 2.0. I do seriously need to get to work on the nursery though. It involves stripping an old wallpaper boarder, patching and painting walls, etc. And while it doesn't have to be perfect, having it mostly together just so baby's stuff is organized will be helpful. Also, having a quiet room where I can shut the door and help baby relax when there is a crazy toddler running around is probably a good idea!

Recipes/Food Ideas to share? @mello13 can you share your recipe for lemon feta chicken? My snacks are always the same: greek yogurt, Nature Valley protein bars, triscuits and cheese, rinse and repeat. Have you tried Yasso's frozen greek yogurt bars? I have been eating one as my nighttime snack and they are really good.
GTKY: Biggest thing you have to get done before LO arrives? Probably take all of my hospital classes! And finish the nursery.
Note: I use Chicken breast cutlets, as opposed to the whole (read: giant!) breast portions. If you choose to use the whole chicken breast I suggest you pound it thin.
You'll need:
Olive oil (or your preferred cooking oil, though this will change the flavor slightly) Chicken Breast Cutlets Lemon Pepper Seasoning One fresh Lemon Feta (the more the better to me!)
Heat oil in skillet to medium heat, season chicken with Lemon Pepper on both sides. Cook in skillet 3-4 minutes per side, or until cooked through. Plate chicken, top with copious amounts of feta, squeeze fresh lemon juice over the top (I like a lot of lemon flavor!)
I usually pair is with fresh green beans and a long grain wild rice or roasted rosemary dill potatoes. The chicken and cheese are a nice protein punch, so having a carb heavy side in small doses works well for me.
@mello13 thank you! I take it you are not scared to eat feta? That was on my list of doctor's no-no's I bet this would also be good with fresh sliced mozzarella on top.
Soft cheeses are a no-go if they aren't pasteurized. Just check for one that is. Boom! Feta, Brie, life is gooooood!! lol
ETA: Yes, you could easily do this with mozzarella and fresh tomatoes, perhaps with some oregano and thyme instead of the lemon pepper. Chicken is super quick and easy around here. Sadly, I've had an aversion since this first trimester, so I have to cover the "chicken" taste with other things.
I've also done a stir fry (sweet & sour, kung pow, brown sauce, whatever you prefer) with the Birds Eye Asian protein blend instead of traditional white or brown rice.
Chicken grosses me out too, so I would have to do cutlets and smother it with cheese. I've been thinking about cutlets with pesto and mozzarella popped under the broiler. I can't believe I haven't thought about stir fry - we will have to do that next week! Thanks for all the great ideas!
