Vegetarian Recipes

hi everyone! Anyone here a vegetarian and got any quick and easy recipes? 
I don't eat eggs either.
i am finding it really hard to even make dinner as I have been so tired and in a I can't be bothered mood

  • This is one of my creations that we frequently enjoy. I usually end up using 5 cups of stock, otherwise it's too dry. If it's too salty for you, do half stock and half water. 

    Barley Risotto with Sweet Potato and Mushrooms, over Sautéed Cabbage

    1 T olive oil
    1 onion, diced
    2 sweet potatoes, peeled and diced
    8 oz mushrooms, sliced
    4-5 cups stock
    1 cup pearled barley, uncooked
    1/2 head of cabbage, shredded
    1-2 T butter
    1 tsp rosemary
    1/2 tsp sage

    1. Toast barley on cookie sheet in oven at 350F for 10 minutes (optional).
    2. Sautée onions and mushrooms in olive oil in large pot over medium-high heat until onions are translucent.
    3. Add barley, sweet potatoes, 4 cups stock, and spices and bring to a boil. Lower heat to medium and simmer uncovered, until barley is tender but still has bite, about 20-25 minutes.  Add more stock if necessary and stir frequently. Cover when done and remove from heat to absorb any extra liquid while sautéing cabbage. 
    4. Melt butter in skillet and sautée cabbage over medium-high until tender. Salt to taste. 
    5. Place cabbage in bowl and top with risotto. Enjoy!

    Google "fat free vegan kitchen" (not actually fat free, just healthy). It's a food blog and everything this lady does is crazy delicious. I mean, amazing. I have food restrictions, and that site is my goto for veggie meals that taste like actual food, not garnish. 

    Another favourite easy recipe is cauliflower-based Alfredo sauce. It tastes like Alfredo sauce, but with none of the heaviness. Sorry, I am running to work, but I will post more actual recipes later. :)

  • Not a vegetarian but I will second recipes from SkinnyTaste -- love that site.  She has a great recipe for Mushroom Tortellini Soup that is great in cold weather!

  • I'm vegetarian!  I have 3 quick meals that I always go to when I don't have a lot of energy to cook dinner, but don't want to order delivery either.  They each require very few ingredients, so it's easy to keep my pantry stocked for these meals and fall back on them as needed.

    1)  Tacos - mix a package of soy grounds (or other meat substitute), 1 can vegetarian refried beans (or black beans), 1 can mixed vegetables, and taco seasoning in a pan and heat - takes about 10 minutes.

    2)  Make a bag of 10 minute brown rice; in another pan, heat up canned mixed vegetables and either tofu or other meat substitute; then add one can cream of celery soup.  I mix all ingredients together with the rice.  You could easily substitute the cream of celery soup for any other soup or sauce.

    3)  Pasta - it's always easy to cook noodles, and I'll either buy sauce or make my own with just a can of tomato sauce and seasonings, and usually mix in a meat substitute.

    When I have more time to cook, one of my favorite blogs is Oh She Glows (vegan) - her potato soup is a favorite in our house!
