Spaghetti broccoli and chicken is a huge hit in my house.
Cut up a few chicken breasts and sauté with garlic and a bit of olive oil. Cook spaghetti and broccoli (I do it in the same pot. Less dishes). Mix it all together with more olive oil and top with parm cheese. It reheats amazingly well!!
I made these stuffed poblano peppers last night! The chorizo isn't the healthiest, but I'm thinking about using turkey with some taco seasoning instead next time to lighten it up and maybe add some zucchini. I GUESS you could leave out the cheese if you really wanted it lighter. But I love cheese. Also, there was leftover filling so I stuffed it into an arepa (kind of like a corn meal/flour bun) for lunch. It was even better the next day!
Crockpot chicken in salsa, add in black beans and chick peas later on. Then quinoa instead of rice and you have the base of a nice burrito bowl. We love avocados in this house so those are always around.
This isn't a recipe nor is it probably healthy (haha) but I thought I'd share for those of us fighting nausea. I got Triple Ginger Cookie Thins at Trader Joe's the other day and they really help settle my stomach when I'm hungry but don't want to eat and am starting to get nauseous. It is pretty potent on the ginger so it helps with the nausea and it's just a very thin crispy cookie so it's not heavy. Really helped me last night when I needed a late night snack!
Last night I made this Loaded Chicken and Potato Casserole. Not a healthy meal at all, but it was easy and SO good. I added a little paprika and seasoning salt for extra zing.
@iceandsnowflakes29 and @LGW2015 I often make this chicken and slice it the night before for lunch the next day. It's easy, fast, and is good cold or reheated. I do it with roasted vegetables or you could put it on salad!
Sorry this is not yet a recipe but an idea to start with....I have been fixated on the idea of noodles with a creamy/cheesy ricotta sauce and spinach, (triggered by a SmartOnes frozen lunch but I think it could be simple enough to make). I plan on using garlic and/or red pepper flakes for added flavor, and low-fat ingredients to make the sauce light...will report back when I get around to making it!
