Healthy Breakfast cookie recipe to help you poop!

After reading all the posts about constipation on the symptoms post, I remembered these cookies! These breakfast cookies are easy, delicious, and seriously helpful if you are constipated! I made the mistake of feeding them to my kids- I changed diapers ALL day. Enjoy!

1/4 melted coconut oil
1/4 cup honey
1 cup rolled oats
1 cup quick cooking oats
2/3 cup dried cranberries
2/3 pumpkin seeds
1/4 cup ground flax
1 teaspoon pumpkin spice (I didn't have this so didn't use it)
1/2 teaspoon salt
1/2 pumpkin purée
2 eggs beaten

Preheat oven to 325. Mix oil and honey, warm in preheating oven or stovetop. In large bowl: combine all dry ingredients. Then add purée, oil and honey, and eggs. Stir.

Drop 1/4 cup sized scoops on cookie sheet and flatten. Bake 15-20 minutes. Let cookies cool before eating.

  • These sound delicious! Seriously, flax seed is where its at! I use ground flax seed in my morning oatmeal or fruit smoothie and its made a huge difference. And flax seed has good fats that are needed for babies eye and brain development. A win-win! I'll have to try this recipe!

    @sdnybrk I don't think coconut oil imparts much coconut flavor. I've used it before and it's very mild.

  • @arteduc8 Does flax seed really help that much? How do you incorporate it into your food, aside from the oatmeal...or is that awesome that you don't need it after that?

  • Oh my gosh, thank you for this recipe.  Unfortunately, this has been the WORST symptom this pregnancy!  Making these this weekend!

    Just read that thread about constipation/poor pooping, as well. I went to a special doc about this (I have other problems) and she told me to make a smoothie every morning of:

    Kefir (has prebiotics, is like liquid yogurt. you can also use yogurt but in addition to kefir)
    Spinach, kale or some other green
    2 tbsp flax seed
    Fruit or berries
    And just about anything else you want to add (juice helps make it more liquidy, protein powder, wheat grass, etc.)

    Also to get a good refrigerated probiotic. This worked for me for a couple of weeks (and I was also taking colace), but then it turned out that rice/beans/corn every day for a while put me seriously back on track, which I have been for over a month or more. Such a relief.

  • @peregrinefalconx Thank you for that recipe too! I'm gonna try it. I used to drink Kefir (more because I'm lazy and get to work so early, I liked that they were ready made shakes) but I'm gonna try it with the other stuff. Rice during this pregnancy has made me so sick, so I've cut that out but I still eat a lot of greens. This symptom is the worst.

  • @mrsmartinez16 I just add a tablespoon of 2 right into my oatmeal. It blends in with the banana, cinnamon, and sunflower butter easily and didn't need anything extra to mask it. They are quite tasteless in my opinion. Same thing with my fruit smoothie. I use a banana, frozen strawberries and blueberries, milk, honey, and flax seed and blend it up and sing taste the flax seed at all. I like the ground flax seed best.
