Any bakers out there?

So I adore cooking and can make pretty much anything (*toot* *toot*) but have issues baking. H is having a potluck at his work and he signed up for dessert. He asked me if I would help him, which of course I will, but I want to send him with something fun and not just run-of-the-mill chocolate chip cookies like I normally would. Does anyone have a fun and holiday-ish dessert they make that would work for this?

  • So if you are looking for something out of the box, this peanut butter pie is SUPER easy to make but everyone will think you are a kitchen wizard. The website says its really rich, but I disagree it has a really light and fluffy texture to balance out all the flavor. Also, instead of buying a tub of whipped topping I usually just get a carton of whipping cream and take the hand held beaters to it then fold it in to the PB mixture instead of beating it some more... this could be why I don't think it's as rich as the website thinks it is. The cookies are easily chopped up in a food processor. Good luck!

  • I would recommend making a trifle! They are so easy and unlike a lot of cakes you don't have to worry about them coming out of the pan perfect. I've made a few by Martha Stewart, her instructions are very easy.

    I found this one that even uses some premade ingredients if you are short on time. Sill looks gorgeous!

  • These were actually quite simple to make and were the best cookies I've ever made. I made them for an office fundraiser last week and they were the first to sell out. The icing tastes like the chocolate icing on a Krispie Kreme doughnut.

  • I am not a baker by any means, but this Chocolate Pistachio Cake is my go-to holiday cake that is super easy (part of the recipe uses a mix) and always impresses. It's my grandmother's recipe.

    Pre-heat oven to 350 degrees

    Mix:
    1 pkg Duncan Hines Yellow Cake mix
    1 pkg Pistachio Nut Instant Pudding mix
    1 Tbsp almond flavoring

    Add:
    1/2 cup oil
    1/2 cup water
    1/2 cup orange juice

    Mix well and then add (one at a time) 4 eggs, beating well after each

    Put 2/3rds batter into greased 10 inch tube pan

    Mix remaining batter with one 5 1/2 can of Hershey's Chocolate Syrup (equal to 1/2 cup + 3 Tbsp)

    Pour into pan on top but DO NOT MIX.

    Bake time is 45 mins to 1 hour

  • I actually am a baker but like simple recipes sometimes. If it can be kept cold, icebox cake is always a hit. Instead of making the chocolate topping, I just melt a container of ready made chocolate frosting and pour over the top.

  • Some of my go to holiday things to make are fudge and peppermint bark. I'd do a platter of those. Everyone raves over both of them.

  • Thanks ladies, this is my new favorite thread! I wish I had something to contribute but I'm old fashioned so all my recipes are written down on paper about an hour away from where I am currently residing on bed rest.
    My daughters (10 & 12) LOVE baking so the next time I get to see them (hopefully next weekend) we will be going through all this yummy deliciousness & picking out some stuff to make for when I can get up & around again.
    @sarawifenow please let us know what you decide to make as I am always the curious one lol

  • I make my own variations of this recipe, but I always get raves about these mini cheesecakes and they are super easy. If you don't feel like pressing in a crust simply buy some Nilla Wafers and set them on the bottom, if you prefer a chocolate crust, you could place an Oreo on the bottom as well. I've tried it all and they never fail me.

  • I make these really good pb fudge brownies that get requested all the time. I found the recipe on pinterest, but it's pretty easy. I'm lazy though and use a boxed brownie mix rather than making them from scratch. I'll see if I can find the recipe...Ive made it so many times I just throw it together by memory now!
  • My go to for things like this are either Marshmallow Stuffed Chocolate Chip cookies (they look and taste amazing and are very easy) or Chocolate Pecan Pie.

    I love to bake, and my go-to simple holiday recipes are either chocolate mousse (my mom's holiday classic) or if I am super rushed - I grill slices of poundcake (I usually have one in the freezer, but if not, you can get them at the grocery store) then arrange on a platter with berries and icing sugar (or sometimes even warmed up jam).
