Every year I make chocolate espresso cookies. Best damn things ever. I probably won't make them this year because coffee has been turning my stomach and they are intensive. I don't do well in the kitchen for long periods of time.
8 oz chopped bittersweet chocolate
1 stick unsalted butter
2/3 cup of sugar
3 eggs
2 tsp vanilla
2 tsp espresso powder (I always add more)
1/2 tsp baking powder
1/4 tsp salt
1 1/2 cup flour
Powdered or fancy sugar for coating
Melt butter and chocolate together, I do this in the micro.
In a separate bowl, beat sugar, eggs, vanilla, and espresso together. Stir in the chocolate mixture, baking powder, salt, and then add the flour last.
Chill 3 hours or overnight.
Shape into tsp sized balls and coat with sugar.
Bake for 10-12 minutes at 325.
The shaping into balls part will coat your hands in a thick chocolatey mess and leave them soft for days!!! Or you can use a cookie scooper. I've never tried scooping them, the dough is extremely sticky.
These cookies are an absolute hit and I get asked for the recipe all the time.
A good sugar cookie with royal icing is always great, plus these are some of our go to treats that we make every year:
3 sticks margarine, melted
1/2 cup molasses
2 cups sugar
2 eggs
1 tsp ginger
4-5 cups flour
4 tsp baking powder
2 tsp cinnamon
1 tsp ground cloves
Mix butter, molasses, sugar, and eggs. Then add 4 cups flour & rest of ingredients. Refrigerate 2 hours. Work in additional flour if necessary. Shape in small balls. Roll in sugar. Bake on ungreased cookie sheet 8-10min @ 350°.

48 HERSHEY'S KISSES Brand Milk Chocolates
1/2 cup shortening
3/4 cup REESE'S Creamy Peanut Butter
1/3 cup granulated sugar
1/3 cup packed light brown sugar
1 egg
2 tablespoons milk
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup additional granulated sugar for rolling (optional)
Directions
1. Heat oven to 375°F. Remove wrappers from chocolates.
2. Beat shortening and peanut butter in large bowl until well blended. Add 1/3 cup granulated sugar and brown sugar; beat until fluffy. Add egg, milk and vanilla; beat well. Stir together flour, baking soda and salt; gradually beat into peanut butter mixture.
3. Shape dough into 1-inch balls. Roll in granulated sugar, if desired; place on ungreased cookie sheet.
4. Bake 8 to 10 minutes or until lightly browned. Immediately press a chocolate into center of each cookie; cookie will crack around edges. Remove from cookie sheet to wire rack. Cool completely. Makes about 48 cookies.
