Turkey troubles! Cooks help

I am cooking thanksgiving dinner for the first time this year and we have a 22lb bird and no oven space. So we are brining it and I'm going to have to do it on the grill and smoke it. I am terrified it's going to bone dry by the time it's cooked.

Do I do low and slow like a normal smoking recipe? Do I cook high heat like an oven so it's done?
I've read @250degrees it cooks 25mins/ lb that's about 9hrs!!

  • Will your turkey fit in your oven? I've removed my racks and had it on the very bottom to cook

  • In the past I've put my turkey in prepped and cooked majority of my other dishes that need to go in the oven, and then after I take my turkey out to sit, I immediately put what needs to go in or warm up. Then I cover my turkey with foil.

    It usually takes me the amount of time to cut and make the gravy as it does to warm the other dishes.
  • Your information is accurate. Low and slow for smoking it but it is so good! Also, you can get a contraption to put the bird on with some liquid if you are worried about it drying out.
  • My husband just smoked a turkey for the first time Saturday. He cooked it very low and slow. He never let the temp get above 200! We injected it with creole butter first and rubbed the skin with creole seasoning. He then smoked it until it was 165 degrees internally! It was delicious!
  • Low and slow is the only way not to dry it out. But if you are looking for a fast and deliciously juicy method I highly recommend deep frying. Best method ever. Deep fryer is a little bit of an investment but I promise you'll be using it every year. Once you go deep fry you never go back
  • I love frying it!! Your right that is the best. But we don't have all the stuff for that unfortunately. I am just confused because I have heard low and slow will dry it out and I have heard higher temps dry it out. It's so stressful! Haha thank you for all the help I will put water at the bottom of the pan for sure either way.
  • Oh also heard that butterflying the turkey helps it cook evenly
