Graham Cracker Crust:
1 ¼ C Graham Cracker Crumbs
3 Tbsp Sugar
¼ tsp Ground Cinnamon
¼ C Butter or Margarine, melted
In a small bowl stir together crumbs, sugar, and cinnamon. Add melted butter or margarine. Stir till well combined. Press crumb mixture evenly onto the bottom of a greased 9-inch springform pan. Set aside.
Caramel Apple Filling:
1 C Apple Pie Filling
1 Large Apple; cored, peeled, and chopped
24 oz Cream Cheese
2/3 C Dark Brown Sugar
5 tsp Flour
3 Eggs
1 Egg Yolk
1 ¼ tsp Ground Cinnamon
1 ¼ tsp Vanilla Extract
¾ tsp Ground Nutmeg
2/3 C Whipping Cream or Sour Cream
In a small bowl stir together pie filling and chopped apple. Set aside. In a large bowl combine cream cheese, brown sugar, and flour. Beat with an electric mixer till smooth. Add eggs and egg yolk, one at a time, beating well after each addition. Beat in cinnamon, vanilla extract, and nutmeg. Stir in whipping cream or sour cream.
Pour half of the cream cheese mixture over the crust. Spoon on 1 cup of the apple mixture. Pour the remaining cream cheese mixture over the apple mixture. Top with the remaining apple mixture. Without disturbing the crust, swirl the blade of a knife through the filling to distribute the fruit evenly.
Bake at 350° for 15 minutes. Lower the temperature to 200° and bake for 1 hour and 10 minutes or till the center no longer looks wet or shiny. Remove the cake from the oven and run a knife around the inside edge of the pan. Turn the oven off; return the cake to the oven for an additional 2 hours. Chill, uncovered, overnight.
Fresh Apple Topping:
1 Medium Apple, thinly sliced
1 Tbsp Lemon Juice
Dark Brown Sugar
In a small bowl toss together sliced apple and lemon juice. Sprinkle a thin layer of brown sugar over the top of the cheesecake. Arrange apple slices on top. Chill till serving time. Makes 12 to 18 slices.

I'm hosting this year so my only responsibility is the turkey. Which i transferred to the fridge on sunday. I can barely squish my finger in it. i think i may put it in cold water tomorrow when i get home at noon. I have a huge fear of it being frozen come thursday moring.

Ooh you need to do the Alton Brown frozen brine method. And good to hear about the cheesecake. I've done many in my life, but haven't done that one.

Here is the link to my cheesecake I made The only thing I did different to save a LITTLE time was I went with a small brownie mix packet instead of making them from scratch.

Everything sounds so good, cannot wait till Thursday rolls around! Question- what's your favorite way to "dress up" stuffing or dressing? I've heard browned sausage is great, any other ideas?

Sausage would be good. I bet dried cranberries (aka Craisins) would be amazing too. Or apples.

Ok y'all, I've actually made this. Except I do them separately. I bake a cherry pie inside a chocolate cake and a pumpkin pie inside a spice cake. They're both HUGE hits!

I like to make Alton Brown's overnight cinnamon rolls and top them with some caramelized apple chunks, dash of pumpkin spice, and cream cheese frosting/icing.
My best recipe is my stuffing (though I should call it dressing since I don't stuff the turkey). I make three batches of cornbread, crumble them, and let them dry out for two days. Then I add browned mild Italian sausage, fresh sage, poultry seasoning, two eggs, and sautéed onion, celery, and carrots, and enough chicken stock to hold it together. Then bake. It's seriously good and so simple. The sweet of the cornbread and savory of the sausage is like. Party in your mouth.
Does anyone else here do the old fashioned southern skillet cornbread that isn't sweet? I'd never even heard of sweet cornbread until college! I remember taking a bite that first time and asking "wtf is this?" I enjoy sweet cornbread from time to time now, but the dressing I grew up on is not sweet at all...and has turkey or chicken in it, not sausage. Just curious!
