WFD? What's for dinner this week?

Hello!  I'm looking for some meal inspiration this week.  For all you planners out there, what's fo' dinner?

It's still above 50 degrees today, so that's grilling weather to me!  Burgers, salad, and sweet potato fries tonight.  That's as far as I have for now... ;)

  • have a lot of late nights this week between work and meetings so it's going to be easy stuff. I had Subway tonight (possibly the most delicious sandwich of my life), then we're planning Chili dogs and tacos for two of the nights this week. Not sure what else yet.

  • Probably pizza tonight. For the rest of the week... No idea. I used to plan it out better, but lately I take it day by day since I never know what I'll want now.
  • We are having pulled pork sandwiches with coleslaw tonight, and I am so excited. @Jesse835235 Your burgers, salad, and sweet potato fries sound amazing as well. We've got tacos on the menu for this week, and taco salad to follow to use up extra meat. I'm thinking about some chile verde in the crock pot for this weekend.

  • Today is Italian Bake Chicken- chicken breasts topped with Roma tomatoes, fresh mozz cheese, and pesto
    Tomorrow- Italian Tortellini Soup- tortellini, ground beef, tomato based broth, spinach, and seasonings
    Wednesday- Homemade Cracker Barrel Chicken & Dumplings
    Thursday- Every man for himself probably

  • @kbrands7 Great meal planning! That's fantastic. I miss the days of doing that. We used to meal plan every week but everything has changed since the first trimester nausea and food aversions. It's was so great to have the week planned out but I just can't trust my weird crappy appetite anymore. 

    I thought I was improving yesterday and told my husband at the grocery store "I think I'm past the phase where food makes me sick." Then he suggested about five different things that all made me gag instantly...so I laughed and retracted my statement. 

    I just want to be back where a nice piece of salmon or chicken seems appetizing.

  • It's taken a little while to get back to meal planning well after aversions. Last week though, I decided that since my nausea had become inconsistent/mostly gone, that I'd just stick to my plans even if I didn't really feel like it. If I forget to prep the night before or in the morning, we have chicken & salads since it's quick.
  • I envy you ladies. I cant meal plan to save my life. I can eat just a PB&J for dinner, but DH likes an actual meal. How dare he ;) We normally scramble for something at the last minute. This weekend we went to TJs and I actually can put together a meal with what we have in the freezer tonight!! Sautéed shrimp, gnocchi and roasted butternut squash.

    Cooking isn't easy for me. I hate doing it. I also really hate meat (even before PG- except for red meat. Give me a burger anyday). I have some veggie aversions. So planning out meals for a week is so daunting!

    I agree-- I've found so many good recipes or recipe bases on Pinterest by just typing in things I have on hand. I also tend to plan based on what's in season/on sale and mix in a few easy things throughout the week on days we're usually busy.

  • Tonight we will be having Sesame beef and broccoli stir fry. I don't usually meal plan by days but by weeks. What I mean by that is I plan about 5 meals through the week and just decide which one I want on each day and take the meat out to thaw if needed. I can't really say that I will want Fish on Tuesday and Lasagna on Wednesday. . .My food mood changes quite a bit pregnant or not. DH usually cooks weekends since he loves cooking. 

    My favorite food blogs are https://thepioneerwoman.com/  https://steamykitchen.com/  and   https://www.simplyrecipes.com/ but I tend to go for cookbooks more than blogs. I have a pretty massive cook book collection forming! Has anyone tried the new Jamie Oliver's Everyday Superfoods? Its on my Christmas wishlist along with Simply Nigella :D

    Ditto Pinterest. I pin a bunch of recipes then go to Pinterest when I meal plan and write out my shopping list. Helps when I'm in a cooking rut also. 
  • I'm the worst. My husband has been cooking or picking up dinner for us because my morning sickness and fatigue is the worst at night. He's out of town this week for work, so I feel like I'm lost. I'm so spoiled! I work from home so hang out in pajamas most of the day, and I can't even bring myself to put on real clothes to get take out. Not to mention I still have MAJOR food aversion. I had to give myself a pep talk to eat chicken this afternoon.

    Pinterest. What I do is I go to my recipe board, pick out 4-5 meals a week (I go to the store usually every other week), and make my grocery list from those recipes (allowing for snacks and such). Saves a lot of time at the store too.

  • @yogahh as far as websites, for sure Pinterest. I've found what makes my life easiest is when I come up with something that sounds good for dinner, let's say tacos, I make extra meat and then boom! I've got an enchilada night using the extra meat from taco night. Or bbq chicken, and boom, I've got chicken tortilla soup another night. Also, I'll have a meal prep day where I pull out all the pots and pans and ingredients and I chop veggies/separate portions for upcoming meals and put them in baggies, I make a huge batch of chili and leave enough for dinner one night and freeze another two to three nights worth for easy future meals. When I make enchiladas or lasagna I make two or three pans of it and freeze the extras for nights I just want a "pre heat and warm up dinner". This takes a lot of time on a Sunday or whenever but to me, it is SO beyond worth it.

    The best one I've been able to find is e meals. They have an app as well. You can sign up online and try it free for two weeks, if you sign up it averages out to be about $6 a month if you go with the 12 month subscription. You choose meal plans from several different plan options i.e low carb, paleo, 30 minute meals, crockpot and it will throw the ingredients needed for each nights meal plan into a grocery list and will give you the best price based off of grocery stores near you. You can add dessert plans or special occasion plans as wanted to your meals. It's pretty organized and does most of the thinking for you which is super nice. The money you save on groceries is worth the $6 a month in my opinion and then once you use it for awhile and get used to the planning and recipes you will likely be able to do it without the help of the site or app.
  • I meal plan religiously. I have a little less than 300 to date. tonight is pizza night - homemade pepperoni pizza and a veggie pizza, w/ a side salad.

    Can you eat corn with your colitis? FH has been warned to stay away as they can cause flare ups.

  • Can I just kidnap Ina Garten for the next 6 months? Well and post-partum so make that 9 months. And when I go back to work and need time to get adjusted, so make it 12. So pretty much until next Thanksgiving. She can bring Jeffrey, too.
  • Leftover cheese and spinach tortellini today. Neither DH or I felt like making dinner today. I don't see that improving later this week either so my meals should be interesting.

    Can you eat corn with your colitis? FH has been warned to stay away as they can cause flare ups.
    My mom has diverticulosis and she can't eat corn, or any type of nuts . These cause major flare ups for her .
