We love to make this pulled pork recipe, it's so simple and delicious. I always double the recipe and freeze half for another meal.
Prep time - 10 min Cook time - 6 hrs in crock pot, *optional: 5- 7 min in oven on broil for crispiness (not necessary but personally makes a huge difference in texture)
2 lbs of pork tenderloins (I prefer boneless) 1 can root beer -(I prefer barqs. You can also substitute with any cola of preference) ! 1 white onion, sliced & separated in two piles 1 tbs liquid smoke 18 oz of any bbq sauce -your choice! (I used Sweet Baby Rays) Salt & Pepper Buns *1/4-1/2 cup honey (optional)
1.Spray your crock pot lightly with Pam. Place half the sliced onions in the crock pot.
2. Season your pork with salt & pepper and place over the onions - add the remaining onions on top of the pork.
3. Pour can of root beer & liquid smoke into the crock pot.
4. Cook on LOW for 6 hours
5. Shred pork with fork and place in baking dish. Drain out root beer from crock pot but save some of the sliced onions and place them in baking dish as well.
6. Bake in oven on broil for 5-7 minutes, the last few minutes.
7. Add your bbq sauce and honey and mix well in baking dish. (I always add some more root beer back in for flavor. Just be sure to go slow to maintain a good consistency.
Ok this piggy backs off of the slow cooker thing. I haven't done this yet, but when I heard it I thought 'how could I have not thought of that yet'. Make gallon bags of slow cooker meals and freeze them. This way all you have to do is defrost the day before, and throw the contents into the slow cooker. Duh.
Eta my go to meals are mainly grill and oven stuff. Roasted chicken, making a butt ton of chimichurri and freezing it for quick marinades on all different meats, meatloaf, pasta.

Mix all ingredients except cornstarch and water in 3-4 quart slow cooker. Cover and cook on low heat for 6-7 hours until vegetables are tender. Turn heat to high. Mix cornstarch and water until smooth and add to chili, stirring well. Uncover and cook for about 15 minutes, until slightly thickened. 8 servings

But in the meantime...for those of you shredding meat, the only way I ever do it (b/c I'm lazy and I despise shredding meat for some reason) I throw it in my stand mixer. Turn it in and it shreds an entire roast in less than 10 seconds.
I was making a lot of tomato sauce from garden tomatoes (not my garden!) in the slow cooker, but the tomatoes are done now.
A couple times a month I make Mexican chicken and beans in the crock pot. 2 chicken breasts, 4 cans black beans, 1 jar of salsa, a bunch of corn. Cook till chicken's done then shred it and add half a thing of cream cheese and stir. Serve with rice, in burritos, in quesadillas, on chips, etc.
I've also made chili pretty similar to the above, with corn muffins of course.
I stuff peppers with everything.... Buffalo chicken, black beans, blue cheese, sour cream and cream cheese. Bake at 375 for 30 minutes. Choose a meat and marinate it and then throw in whatever else you have! We like taco stuffed peppers too.
We have also done pesto chicken. Chicken breasts, cover in store bought pesto, sliced Roma tomatoes, cover in mozzarella. Bake at 375 for 30-40. Delicious
I just made a one (cast iron) skillet meal that turned out great.
Heat oven to 350 degrees
One yellow onion diced 4-5 stalks of celery diced Half a package (approx six strips) bacon diced. 4-6 chicken breasts Seasoning of your choosing for breasts (I used Pensky's Fox Point Seasoning) Rice
Heat skillet and add bacon. Cook until fat renders out. Add onions and cook until slightly tender. Add celery. Cook until bacon looks done. Season breasts and place on top of bacon onion mixture. Put the whole pan in the oven. Bake approx 20 minutes and then flip the breast over. Raise temp to 375 to brown the breast a little. Bake another 20 minutes or until chicken is done. Serve over rice.
I'm cooking like a college kid lately. Microwave breaded chicken patties or some big meat in the crock pot, frozen skillet meals, frozen veggies, 90 second rice.
Oh! We just bought a cast iron skillet. We've only cooked steak, and it was great. @lovethatcolosun got any more recipes? I'm going to make that chicken!
I make a stove top/skillet lasagna that's pretty easy. Soak the noodles in hot water until they soften. Then, On bottom of pan, start with 1/2 jar of pasta sauce+ 1/2 jar of water, top with one layer of noodles, filling, then rest of noodles and rest of sauce. Simmer until noodles are completely done.
Crock pot discussions make me insecure because I mange to overcook everything. But this didn't turn out too bad, vegetarian sloppy joes: 1 3/4 c water, 1 c dried lentils, chopped bell pepper, am chopped onion, 2 tbsp honey, 1 tbs mustard. Cook on low 4 hrs, stir in a can of tomato sauce, then cook another hour.

I just made Italian chicken in the crockpot tonight.. It took me about 5 seconds to put together and hit the button and was really juicy and good! You just put 4 chicken breasts (the ones I used were frozen and normal size..not gigantic if that makes sense) and one whole bottle of Italian dressing (I used Kraft zesty Italian) and that's it! I let that cook on high for 3 hours but it probably could've gone 2.5 hrs. It was so good and makes me so happy that it was so easy.. I cooked corn and green beans to go on the side which didn't take long either, so all in all it took maybe 15 minutes to prepare and not much thinking involved!
Edited to add: I'm sure everybody has had this at some point in life..my mom used to make this when I was a kid, but I've never made it bc it was always dry and kinda boring I think bc she grilled it. But yeah in the slow cooker it's amazing and so easy!

Buffalo Chicken Sliders
Chicken breasts, a little water, and some wing sauce (I used Sweet Baby Ray's wing sauce) into the crockpot. On low all day. Shred the chicken.
Serve on buns with ranch or blue cheese dressing.
You can also cook the chicken plain with the water, then add the sauce later. This is good if some people don't like wing sauce. Or if you make a bunch and want to use it in different ways throughout the week.
ETA: ive made these several times changing the seasoning each time. I've used white cheddar popcorn seasoning, shake and bake barbecue glaze, or just salt always amazing
