Low iron & food/recipe ideas

Hi everyone!  I got the results of my huge first tri screen back yesterday, including my Panorama, and everything looks fabulous genetic-wise.  :)  And...we're having a girl!  We're so excited.  

The only iffy result that came back out of everything was my iron is low - not low enough to start iron pills yet but they told me to eat iron-rich foods and they're going to retest in several weeks.  I've done some reading and know all the standard high-iron things to eat, which honestly seem to be part of my current diet, but I'm wondering if anyone has any favorites or good recipes they might want to share?  For lunch today I had sauteed spinach and cherry tomatoes for the iron content, a scrambled egg for protein and a piece of ezekiel toast with jam - to round out my breakfasty lunch. :)  Just looking for new ideas.  I'm sad to say since I got pregnant red meat has just sounded absolutely disgusting and I'm having a hard time even stomaching the thought of eating it right now.  I've been having chicken and pork and beans and lentils and greens and healthy cereals all the time but evidently that's not cutting it.

  • I have issues with low iron as well. Eating iron-rich foods to supplement is more effective when you eat them at the same time as things high in vitamin C (because it aids in absorption) and lower in calcium (interferes with absorption).  Things like Tex-mex sorts of recipes with beans, chicken or beef, enriched rice, and salsas are good choices. Basically, think grains, along with a dark green vegetable and either a red or orange vegetable and beans/meat protein.  There are a bunch of recipes that I've used here: https://www.eatingwell.com/recipes_menus/recipe_slideshows/iron_rich_recipes?slide=1#leaderboardad

  • Cooking in cast iron can be useful as well. I know people who choose to go vegan are often told to cook acidic foods like tomato rich courses in cast iron. Cooking in the cast iron will actually up the iron content of your food, which is pretty awesome!
  • Green smoothies;-) add more fruit to begin with so enjoy the taste and decrease gradually so you have more veg. Spinach kale Apple lemon and cucumber with mint is one of my favourites. Or mango, pineapple, spinach and celery... Yum!!
