So tired...but must eat...

Sadly, my husband and I aren't living together right now, as we live in different states due to our jobs (hopefully that is changing soon!), but with living alone I have found the worst part to be trying to grocery shop/make myself meals. I work long hours and at the end of the day have so little energy that going to the grocery store just simply has to wait until the weekend. On the couple of days between shopping trips when I run out of food, I'm so exhausted that I usually end up going the fast-food route. I hate to do it, but otherwise I probably wouldn't eat at all (I'd go home and sleep!). Any suggestions on what foods to select that will still give me at least some of the nutrition that I need? I promise to shape up in the 2nd trimester when my energy returns!!

  • I'll add that what I'm really craving is a big ol' salad, but not enough to drive on the interstate during rush hour traffic to go to the grocery store to buy the items...I just don't trust the pre-prepared ones at restaurants to be clean. I would also die for a cold turkey sandwich but I know I can't have that...and warmed up deli meat sounds repulsive.

  • Can you get take out from non-fast food places? I'm too tired to get all dressed and go out to my favorite spot for a salad, but they have no problem making it a take out order for me. If you live near a Panera, they do online ordering now.

    As far as at home, you can cook things like chicken or pasta/sauce on the weekends, portion it out, and freeze it. Bam! Your own microwaveable meals. I also really like the veggie steamer bags you can buy at the store. I always have about 5-6 of those in the freezer for a quick healthy side. You can run through drive thru and get a grilled chicken sandwich, skip the fries, then come home and throw one of the veggie bags in the microwave.

    If you buy salad mix on the weekends, buy a salad spinner to throw it in, or put a paper towel on top, close the container, and turn it upside down in the fridge. The paper towel will soak up extra moisture, helping to keep your greens fresh.

    Ah man. I envy you that we're able to eat salads. The only veggies I could eat were carrots. It's backing off now, the M/S, but I'm still to tired to cook or shop. Eating is a chore but I'm starving. ~X(
    Oh I forgot suggestions. Umm...nope I'm blank. I had taco bell for lunch. :-<
  • Don't feel guilty for eating fast food now and then. I've had it weekly for lunch! and planning on pizza today! I work full time also and I am drained after getting home and packing hubbies lunch, etc. my saving grace has been the bullet blender I just bought and a stock pile of frozen fruit. I make several different kinds of smoothies and can usually make do with a large one for a mean with maybe some cottage cheese afterwards. I've also started freezing meals. I made several casseroles and froze them.. Place them out to thaw while at work and when you come home just throw it in the oven. Super easy. Pinterest and Internet have great recipes for that.
  • If you have a Whole Foods in your area, that is a pretty good bet for "fast food" (i.e. they have a lovely prepared food section) that is also healthy. Great salads, etc. 

    Another option: Grocery stores have the salad "kits" that are pretty good. They usually have nuts, dried fruit, dark leafy greens and a decent dressing and cheese. Again, "fast," but not unhealthy.
