Have you tried this before? I did a cauliflower bagel once - it was not even tolerable. I would love to hear if you have tried this (and liked it) and share the recipe if it is good.
Psh. I have no idea what I'm making this week. I'm kind of winging it because I've been too tired to make actual decisions. Also all I've been wanting to eat is salad and veggies (yay hormones for actually making it easy to eat healthy!!) so the idea of making an actual meal with meat and stuff isn't really appetizing right now.

I think my week will look something like this; in no particular order. DH usually tends to mess up my meal plans though. Some nights watching me cook is just too exhausting for him. ) I guess that's what he means when he says he's "too tired to cook" since he literally never does anything to help.
Dill Salmon and seasoned red potatoes
Parmesan crusted chicken breasts with a rice and quinoa side including carrots and broccoli
Lemon garlic flounder with broccoli
Avocado pasta (ya know, instead of Alfredo sauce you puree an avocado with a little basil, oregano and olive oil)
Sesame chicken with vegetable fried rice
Veggie Pizza
I also have some extra red potatoes and a lot of sweet potatoes for backups in case DH decides he wants a different side one night. Plus I've been enjoying a baked sweet potato with a little butter as an after dinner snack/dessert.

I'll let you know how it turns out and post the recipe if it's good. It seems like it will be similar to rice pizza crust (I also add pizza seasoning to the mix for more flavor). I like to make rice pizza occasionally when I don't have time to make dough. It's actually really tasty!

Thank you! I am so excited! And of course I put off packing till last minute. Last night I realized I needed to do laundry before I pack, so you know minor detail. I did end up buying some early maternity pants at target (the ones with the stretchy side panels, not the belly panel). So packing will be easier with that and leggings. No regular pants over here!
Ok I digress. I will definitely post DHs reaction and the whole moment when I get back!
The trip was wake easy planned but now it's our little babymoon.
These are the meals I have planned for the next week or so, probably some nights will end up being leftovers or take out.
-Stir fried tofu, brown rice, steamed green beans -Black bean and cheese enchiladas with Spanish rice -Red lentil dal with basmati rice and mashed sweet potato -Ravioli pasta bake with salad and garlic bread -Veggie burgs with slow cooker baked beans and tater tots
