GTKY: favorite fall recipes

So I promised my stepson we'd do some fall baking next weekend he's with us. Specifically, he wants a pumpkin roll. No big deal. Except I don't know how to make one!

I love homemade lattes (decaf for this chick now) and pumpkin anything.

What are your favorite fall recipes? Bonus points if you share your recipe!! 8-X

This morning before I left for work I put ham and beans in the crockpot. It sounded good this morning, I hope it still sounds good tonight!

Ham and Beans Recipe:

One pound ham (I usually get one that is sliced and it falls apart in the crockpot)

One pound dried Northern beans (rinsed and drained - pick out rocks if there are any)

3 14.5 ounce cans of chicken broth/stock (whichever you prefer)

One yellow/white onion chopped

Pepper to taste

Parsley to taste

Oregano to taste

Mix in crockpot; cook on low for 8 hours. Make sure to "cut" up the ham so it's not in big pieces.

We sometimes eat it with cornbread. Hope you like it!

Stuffed acorn squash! I use this recipe as a basis, but brown up ground meat, onion and sage to add to the filling also. Sometimes to make the filling stick more, I also mix in a sprinkle of flour and milk before adding the cheese. We swap the raisins for walnuts too.

At Christmas time, I make it with berries (raspberry, strawberry, cranberry) instead of apples.

DH is a phenomenal cook and he enjoys it, so I don't do much of our day-to-day cooking. But, I do like to bake. This time of year, my favorite recipe is pumpkin spice bars. They are delicious and so easy to make (total prep and cook time is less than an hour). I usually make them for Thanksgiving and/or fall parties and get togethers. Here is the recipe:

Ingredients:

1/2 box of spiced cake mix

1/2 box of white cake mix (You can use 1 whole box of spiced cake mix instead of the white cake mix if you don't want to waste 1/2 of each package, but it comes out a little too strong for my taste if you do. I typically make 2 batches so nothing goes to waste.)

3 large eggs

1 TSP of cinnamon

1/2 TSP of allspice

1 cup of sugar

2 TSP of vanilla extract

1 16 oz. can of pumpkin

1/2 cup of melted butter

Instructions:

Mix all ingredients except for cake mix and butter together until fully blended, and pour into a nonstick or oiled glass baking dish. Combine dry white and spiced cake mixes, and sprinkle dry cake mix on top of ingredients in baking dish. (I use a sifter because it spreads more evenly, but you can do it with a large spoon.) After the cake mix has evenly coated the mixture, pour melted butter on top of cake mix as evenly as possible.

Bake at 350 degrees for approximately 30-35 minutes. Slice into squares, and enjoy!

@mrstmoose Where do you get the ham you use for ham and beans? From the deli or the refrigerated section? I LOVE ham and beans but I've never made it!

Homemade beef stew is my favorite! The hubby loves cooking and is very good at it so we eat good in the winter:) hoping this all day sickness is gone soon so I can enjoy food!
