Anyone have some healthy food recipes to share?

I haven't seen any post like this yet but if there is please let me know where to find it. I'd appreciate it. I know there is a powerful eats post but not a healthy recipe or something that I've seen.

My last pregnancy I was fairly fit before I got pregnant and only gained about 20 lbs. This pregnancy I'm a little overweight and I'm trying not to binge eat terrible things. Lol do any of you have any suggestions for healthy recipes that I could perhaps include in my diet and maybe get my husband and kiddo on board to eat? Or hell make leftovers for myself anyways lol thanks ladies!

  • I love these posts as I'm always looking for new recipes to cook so I can keep the variety. My two favorite recipes:

    Also, I can make a nice slow cooker beef stew like it's nobody's business

    -1 lb beef stew, beef stew seasoning packet, 1 tsp minced garlic

    -baby carrots, onion, cabbage, red potatoes,

    -water

    Mix all ingredients together and add water. Cook on high for 4-6 hours, or low for 6-8 hours.

  • Maybe not the most healthy, but delicious and quick: creamy chicken and rice from Natasha's Kitchen (on Pinterest). I usually add more carrots and peas sometimes. We all fight for leftovers the day after.

  • tablefortwoblog.com has some really good recipes. I have tried a lot of them and they've all been great like the chicken tortilla soup, mongolian beef, and asparagus zucchini pasta.

  • I found a cilantro lime zucchini noodle recipe with chicken a while back that DH LOVES but, like @pinottoparenthood....everything sounds repulsive right now.

  • Our go-to taco recipe is super healthy and delicious. Sauté one diced onion, one diced red pepper, and one diced orange or yellow pepper in some olive oil over medium heat until veg is soft. Add in one pint of halved or quartered cherry tomatoes and continue to cook until they start to soften and break down. Make a well in the center and add 2 pounds of ground lean turkey and cook until browned, slowly work the veggies in until well mixed. Add either 1 and a half to two packages of taco seasoning or your own pre-mixed seasoning to taste (I use cumin, coriander, garlic powder, smoked paprika, and cayenne) and a little salt and/or pepper as needed. They are awesome and my son loves them in the little tortilla "scoops" topped with cheese.

  • I lost 65 lbs on whole30 last year and cook primarily whole30 meals. Well fed 2 is my favorite cook book and the author also has a great blog called the clothes make the girl. I might be her biggest fan, but I'm all about a healthy dinner! I've cooked almost every recipe she has, if you want any tips :)
  • This is my favorite soup in the whole world. Super healthy and delicious.
    It tastes even better the next day, once the broth has thickened furthered and the flavors take more depth:

    Taco soup:
    1 LB Ground Whatever (I usually skip this, and triple up on zucchini, but I'm psuedo vegetarian...)
    1 Onion, chopped
    1 teaspoon Garlic
    1 packet taco seasoning (or healthy taco seasoning recipe from all recipes.com, no msg and hidden ingredients that way)
    1 small can green chilies
    1 32oz can Roasted diced tomatoes (garlic are yummy!)
    1 LB (or 3, for good measure) zucchini, chopped)

    Sauté first four ingredients together until meat is brown (or just until onions are translucent if not using meat) and drain.

    Add all other ingredients, and cover with water. Bring to boil, then simmer on medium low for thirty minutes, or until zucchini is fork tender.

    Serve with cheddar cheese, and sour cream, if desired. I personally prefer a whole avocado diced up in it.
  • @tfmb2009 Their pork carnitas are the shit! I use the basic principle of that recipe and make a roast with lime and orange juice, and OMG!!!!! Most amazing roast ever!

    I've followed Weight Watchers off and on for several years, and this website has a lot of healthy, adaptable recipes. These spinach lasagna rolls are awesome! Plus they can be pre-made in a larger batch and then frozen sans-sauce. Seriously delicious and pretty easy!

  • I'm so excited to try this! Making homemade pumkpin puree for smoothies this week.

    Cut a pie pumpkin in half, remove seeds and pulp, dust with cinnamon, and bake at 400° for forty five minutes to an hour. When it's done let it cool, and peel the skin back then blend. Strain any strings back out of it and refrigerate.

    I plan on making smoothies out of this with bananas, or strawberries, and apple or cranberry juice. Probably going to add plain Greek yogurt to it as well.

    Have you checked out whole30? Their book It Starts With Food has some amazing recipes for it.

    I haven't checked that out yet, but I think it's on the list. We got a few new paleo cookbooks before we learned we were expecting and I am just now able to look at them.

    I was inspired by something I saw on Pinterest. But I only used what I had on hand though, and I eyeballed measurements for dressing. It was delicious!!! Which says a lot because I was avoiding vegetables for a while due to pregnancy.

    Chopped Greek Salad (4+ servings)
    1/3 of large red onion, finely diced
    1 cucumber, peeled and chopped
    About a cup or more of chopped tomatoes
    1 can of rinsed/drained chickpeas

    Toss all ingredients together. You can add banana peppers and olives if you are so inclined. Scoop out your servings onto a dish, put the extra in the fridge, and make dressing.

    Vinegarette dressing (1-2 servings)
    About a tablespoon of red wine vinegar (my brand was flavored with garlic).
    About a tablespoon of olive oil
    Pinch of kosher salt (to your preference)
    Pinch of black pepper (to your preference)

    Whisk together with a fork and drizzle over individual serving of salad. Use the same whisking fork to eat your delicious salad to save yourself some cleaning.


    Tip: I recommend making the dressing as you need it. For one, it takes less than a minute to prepare. And two, if you pour it over your leftovers, the acidic vinegar will turn everything to mush as it sits in your fridge within a couple of hours. Ain't nobody got time for that.


  • Just made an awesome dinner! Roasted a sweet dumpling Squash with olive oil, salt and pepper

    Sautéd some onion in butter, added rice to it and stirred just until golden, added half water and coconut milk to make up for the liquid, and salt, then simmered for 15 minutes. While this was going on I heated a can of black beans with some onion and a packet of sazon seafood flavoring.

    Made my typical salsa of a tomato, some onion, lime juice cilantro, salt and pepper. Put it all together in a bowl, and OMG so amazing!!!!

  • It's not a dish but a drink I have grown really fond of making lately and it helps greatly with the nausea:

    1 Apple (a sweet sort)
    Half a lime (and lime zest)
    Minced ginger
    Mint leaves
    Lots of ice cubes

    In the blender for a minute and voila!

    It's so healthy and I've been craving it a lot. It helps with my nausea and I get an energy kick from the ginger. Yum!


        

  • Heidi Swanson wrote the Super Natural cookbooks, and her website has some fantastic recipes that use delicious, organic whole foods. Her photos are also gorgeous.

    I also crave Alice Waters' minestrone ALL the time. It is my go to for fall, but you can switch it up for different seasons, depending on which veggies are at the market.

    Hoping I can start eating delicious autumn things soon. The nausea is finally starting to subside.

  • My favorite website is Budget Bytes, we eat vegetarian most nights and I like her website's veg section. Thug Kitchen is my favorite cook book! 

    I also could eat rice + beans with a little BBQ sauce like... every day, that's a pretty legit meal with a vegetable on the side/mixed in.

    I'm a total smitten kitchen groupie. She's got great stuff of the healthy variety, as well as the pregnancy craving variety.

    My mom and her boyfriend make cinnamon water if you are looking for a new beverage to try. They brew cinnamon sticks in boiling water, cool it in the fridge and then drink it. She says it is especially helpful when she's craving sweets. I don't have the recipe (super unhelpful I know). I googled it, but all that is coming up is some cinnamon-honey cleansing diet fad. If she gets back to me I'll post it!

    I'm a HUGE Smitten Kitchen fan! I use one of her beef chili recipes religiously. And the one for world peace cookies. And her birthday cake recipes. All so good.

    I would definitely want to eat an avocado right now if I wasn't feeling so bloated and uncomfortable lol

    And you should definitely try the drink, man now I'm craving it again

  • Here is the cinnamon water recipe from my mom:

    Cinnamon burmanii and cinnamon verum - 5 sticks of each, about 3-4" long for about 4 cups boiling water. Let it steep at room temp for 4-6 hours, then chill. I use the sticks as mulch around plants - if you push them in the soil they help retain moisture. 

    If you want hot cinnamon water, you can heat it after it chills. Chilling after steeping really makes a difference in the flavor.

  • I have made this a few times; only once since I've been pregnant since I wanted nothing but greasy, horrible for me food in the 1st tri. My husband says he doesn't like spaghetti squash, but he loves this. I just put cheddar cheese on mine instead of blue cheese. I add a little ranch dressing or ranch powder, too.

    I love whole 30! I follow a ton of IG whole 30 accounts and get recipes from there!
