I meal plan on Sunday. It isn't a science since I just make a bunch of stuff that can go well together depending on our moods and what we are feeling for lunch or supper.
I made beans, rice, quinoa, roasted chicken, roasted veggies (dish one? cauliflower, broccoli, red onion and garlic; dish two? pea pods, red onions and bell peppers), pesto pasta, yogurt parfaits for breakfast, pre-made protein shake packs (banana, PB, protein powder and milk), snack packs of nuts/cheese/dried fruit and snack packs of apple/banana/PB for the week this week!
@mkemommy I wish could batch cook on the weekend! DH would throw a temper tantrum if I didn't switch up meals during the week. I try doing it for lunch but then I just end up eating all 5 servings on Monday. Whoops!
I tend to go grocery shopping over the weekend and plan what I am making through the week I live close to a whole foods so I just grab veggies as I need them.

The thing is we do end up switching it up with batch cooking. So today might be beans and quinoa with veggies, tomorrow might be pesto pasta with veggies, Wednesday might be rice and the roasted chicken, Thursday might be some of the roasted chicken on tortillas with salsa and a side of grain and beans for taco night, etc. It was hard at first but if I'm creative enough about the staples I cook on Sunday, H doesn't really feel like he is eating the same thing every day (though breakfast and his snacks are the same every day). That said, I agree that it is hard not to overeat when your fridge looks like it has enough food for 10 people.

We eat leftovers at least twice a week and I love it! No time spent and no dishes. We usually do leftovers on DH's late nights bc I hate cooking dinner when he won't be home to eat with us. Leftovers FTW!

Yeah it's really good! Super lean and not gamey at all. A lot of the cuts already gross me out to chop up and I couldn't stomach meat for about a month last time. I don't want to keep it in the freezer too much longer since its already been there a year.

I'm supposed to be meal-planning for the week (actually I try to do this on Wednesdays but it's Fall break and DD is derailing all my usual plans....). I'm trolling your guys suggestions for ideas, because literally nothing sounds good to eat and I don't really want to cook, either. After reading this thread, I've decided basically I just want to eat potatoes. ALL POTATOES ALL WEEK LONG.
^^this! I had everything planned at the grocery store on Sunday, but now I can't even look at 3/4 of it, let alone eat it. Carb loading over here. It's carb loading or vomiting profusely.
My meal plans this week went to crap because my daughter got the stomach flu and wants to eat whatever she sees us eating. So we've done a lot of late night fast food runs. Tonight I'm making stroganoff. Tomorrow I think we are grilling burgers. Then Sunday we are going to a wedding.
