Creamy crockpot chili! This is so good. Always a crowd pleaser. When I'm feelin real speshul I use Greek yogurt cream cheese to healthify it up a lil bit :-B
Country style ribs - 3-4 country style pork ribs, cover with bbq sauce and a cup of chicken broth (or you can use a can of beer like DH). Set for the 4 hr cycle. The meat is usually falling off the bones when they're done. We like to serve with BBQ sauce, corn bread, baked or mashed potatoes and roasted veggies.
Pulled pork...just get a pork butt or shoulder roast and put in the crock pot with 12 oz of Coke. When done cooking (I can't remember how long it calls for) just shred the meat, drain the liquid, and add any kind of BBQ sauce. Doesn't get much easier! We've also tried it with Dr. Pepper and that gave it a little bit sweeter flavor. Yummy either way!

1lb of ground beef 1 can or bag of mixed veggies 1 can of stewed tomatoes 1 bottle of V-8 tomato juice 1 packet of Velveta cheese 1 cup of macaroni noodles
I mix everything except the noodles together and I keep it cooking on low. Then I add the macaroni noodles 45 minutes before we eat.
Here is one of our fav's, Indian Eggplant with Potatos
2 medium eggplants, stem end removed, cut into 1/2-inch dice (approx. 10-12 cups) 1 large Idaho or Yukon Gold potato, peeled, cut into 1/2-inch dice 1 medium yellow or red onion, peeled and chopped 1 tsp ginger paste (or grated fresh ginger root) 6 cloves garlic, peeled and coarsely chopped 2 jalapeño chiles, seeded and minced 1 Tbsp ground cumin 1 Tbsp ground red chile pepper 1 Tbsp garam masala 1 tsp turmeric 1/4 cup canola oil 1 Tbsp kosher salt, or to taste 1-2 Tbsp chopped fresh cilantro, to taste Directions Combine eggplant, potato, onion, ginger, garlic, jalapeño peppers, cumin, ground chile pepper, garam masala, turmeric and oil in a 4- or 5-quart slow cooker. Stir as best you can to distribute the spices and oil. (The smaller cooker will be very full, but don't worry; the eggplant will cook down.) Cook on HIGH for 2 hours, stirring after 1 hour. After the first two hours of cooking, stir well. There should be a nice amount of moisture in the cooker, and the eggplant should have collapsed a bit. If there is plenty of liquid in the pot, continue cooking on LOW for 30 minutes, uncovered. If there's not much liquid, cook on LOW for 30 minutes with the cover on. Add the salt and cilantro, to taste. (Salt added during the cooking will draw more moisture out of the eggplant, so it's best added at the end.) Serve at room temperature, over rice or topped with raita, or make ahead.

I start by melting some butter in a skillet on med-high. Then I salt and pepper the roast. Sear it on both sides and the edges. I usually only sear it for about 2-2 1/2 minutes per side and about 30-45 seconds on the edges. Then place in the crock pot.
Next, cut the onion in quarters and sear these in the skillet as well. Just enough to brown the edges. Then place around the roast in the crock pot. Next, add enough beef broth to cover the roast. Add in your garlic and thyme directly into the beef broth. Cook on low for 6-7 hours.
I usually don't add the carrots until about halfway through so that they don't get too mushy. But you can add them at the beginning and it will turn out just fine.
I make crockpot macaroni and cheese and it's so good. It's actually a Paula Deen recipe, but she uses a can of condensed cheese soup, but I stopped using that and just stuck with these ingredients---3 eggs, 1 cup milk, 8oz sour cream, 2 bricks of sharp cheddar cheese, 1 box of elbow macaroni, I put in a tablespoon of yellow mustard and some salt and pepper. Cook the noodles on the stove and then transfer them to the crock pot with all of the other ingredients. Cook on high for 3-4 hours.
Chicken taco soup! For 3 bowls: 1 can Rotel 1 can black beans 1 can corn 1 pack taco seasoning 2 chicken breasts

Do you add any liquid? Or just the liquid from the Rotel? More of a stew than a soup?
I don't add anything. It probably falls more under stew. If you want more liquid initially, just don't drain the cans. I also forgot to add you're supposed to use a fork to shred the chicken when it's all finished.

I make what I call hawaiian chicken. Some frozen chicken thighs, can of crushed pineapple, couple tablespoons of soy sauce. I put it on low all day while at work. Serve with white rice and some sauteed broccoli.

Cook on low and then shred up and remove from liquid. Excellent on corn tortillas with some fresh pico! If you want to make it more authentic, put the shredded pork in the oven and broil for a few minutes to crisp up. Put it in your taco and then drizzle some of the juice back on top. One of our favorites!

2lbs chopped beef stew meat 1 cup sour cream 1 can cream of mushroom soup 1 cup milk
Cook on low all day and toss in some egg noodles about 30-45 mins before serving!

Cook on low all day then pull out meat and put on hoagie rolls toasted with provolone. Dip sandwich in the juices. Mm mmm I'm smelling this one in the crockpot right now!

I made this last night but substituted cauliflower for broccoli because it's what I had in the fridge. So good!!!
I'm so glad I could bring this recipe to other people's lives! It so delicious. I'm making it tonight it's also a really great soup to bring to people who have just had babies! It reheats really well and freezes pretty well too!
@narissa2013 I'm going to make the Hawaiian chicken, but I'm going to do teriyaki instead of soy and fresh pineapple. Do you defrost the chicken first?
So I've never used a crockpot until recently. And it's genius! Sooo stress free! I used to spend hours cooking and cleaning daily! I love this!!! Now I get up to get the kids to school, throw everything in the slow cooker, turn it on and forget about it! I'm happy to have learned about this now, so I can be ready to feed the clan and care for the baby once she comes!
