Monday (was): tomato tart with side of kale and shredded beet salad (included chard, beet greens, goat cheese, dried peaches and sunflower seeds) with an apple cider vinaigrette
Tuesday: Grilled shrimp and pineapple skewers over coconut rice with baked zucchini fries on the side
Wednesday: Citrus marinated halibut with vinegar slaw and roasted root veggies (acorn squash, carrots, beets, parsnips)
Thursday: homemade chicken noodle soup with side salad (probably more kale/beet) and fresh baked bread
Friday: homemade pizza
Saturday: BBQ something or other with 3 bean salad and shrimp/pasta salad
OH...and desserts...I'm making a crust-less apple pie tonight and later this week will be making pumpkin pie from some of our homegrown pumpkins...with fresh whipped cream...yummmm!!!
