Freezer Meal Ideas

Not sure if there is already a post like this but I would love some ideas for some yummy vegetarian freezer meals to make before the baby arrives. 

Also, along those same lines if you have any specific recipes that you would love to share I would love to try them! 

Also, has anyone tried freezing muffins//pancakes? How do they come out?

  • We aren't a vegetarian family but if think you could do soups and freeze them. I plan on doing some and freezing them in muffin tins so hubs can take them for lunch or we can pull a few out and defrost rather than freezing in large portions.
    I haven't made and froze pancakes or muffins but I'd think since you can buy frozen pancakes in the grocery store, they should be fine. I have done waffles and just toast them like the Eggo ones and there are pretty good A few weeks later even. Also muffins are a type of bread and I make and freeze all our breads and they thaw out fine. I'd assume they'd be fine but you can always do a batch and freeze one or two and try in a few days. Trial and error I suppose.

  • Check out Pioneer womans website! She has a ton of freezer meal ideas! My favorite was lasagna, burritos, and monzarella sticks!
  • You'll find all you need (actually...more!) on Pinterest :) A lot of the sites even have shopping lists. 

    DH is away on a Boy Scout weekend, so me and my mama are going to get to town on some freezer meals! Loving that she's got double ovens too ;) 
  • I froze both muffins and pancakes. They turn out fine, just make sure you get as much air out of the bags as possible.

  • My cousin did one of those freezer meal challenges, and she swears that tortilla-based meals freeze really nicely, so quesadillas, burritos (bonus, you can freeze both these in some large zip-locs and they're great for grab & go lunches), and enchilladas. You could easily make any of them veggie, but don't try to freeze any pico de gallo-type sauce, raw veggies don't freeze well, especially tomatoes, onions, and peppers.

    Also, my husband has frozen biscuits before, and they are just fine re-heated, so I'd imagine muffins and pancakes would work as well.

  • Pancakes freeze well! I freeze them all of the time so I have quick breakfast for my 22 month old. They can be a bit dry so we dip in apple sauce or yogurt to give him s healthy alternative to syrup.

  • Lots of slow cooker recipes on Pinterest specifically for freezing! And talk about super easy supper you just have to remember to turn on the slow cooker :)
