I see most people on here talking about travel systems, but I plan on baby wearing and we will never really need a stroller except the rare occasion. I was considering just getting a convertible carseat and an umbrella stroller for later so we don't have to buy an infant seat, stroller that attaches, then a convertible seat when they outgrow it.
Any STMs completely skip the infant seat or is it worth the extra cost?

I don't know if the convertible carseats do it, but our travel system has a base that stays in the car and the seat itself can be popped out easily. It's a convenient feature and one of the major reasons we chose it.
This. It's so easy to carry the seat in and out of places while they are sleeping. I missed it when my DD was switched to the convertible for that reason only. Also it being so cold you can just throw a blanket over and they will be fine. I will say if you want to skip the stroller and get a good supportive umbrella I get that since they will be born in Jan. baby could at least be comfortable strapped in at 4 or 5 months in an umbrella.
I'd be shocked if you felt it was a waste!
For me, my son fell asleep every single time he was in the car. Waking the sleeping bear was a terrible idea for us, as he refused to fall back asleep once woken. And calling him a bear was an understatement. I always liked the ability to let him sleep by keeping him in the carseat. Unfortunately due to severe back problems and his size, I didn't really get much chance to wear him. He also outgrew his infant carrier at 5 months old...

For DS we skipped the infant seat and used just a convertible seat, and will do the same for this baby. A few reasons -
1. We live in FL, so winter and extreme cold weather is not a factor for us.
2. I baby wear (and we do also have a stroller) and never found it inconvenient to take DS out of the seat.
3. DS was large, just under 10lbs, so we knew he would outgrow the infant seat pretty quickly.
It's a personal choice and I know I am in the minority, but we really like having just the convertible seat. DS is still in the seat he came home from the hospital in and will continue to stay in it until he reaches the height and weight limits. 40lbs rear facing and 70lbs forward facing.

Edited to add... I forgot to mention that our seat went up to 35 lbs so it took a lot longer for him to out grow. Some infant seats only go to 22lbs, so that will determine how long you can use it. My baby was a chunk but we were still able to use it up to a year because of that.
Like @RunnerMeg said, Convertibles are just as safe as infants. It is a personal choice obviously, but they are safe, your baby will be fine no matter what you choose, and either option has it's pros and cons, but you are not doing any disservice to your baby by not getting an infant seat.
