I'm making "corndog muffins" with diced veggie dogs and cornbread. It's soooo easy and I can make it gluten-free for a friend that is coming over tonight.
Husband's out of town til Sunday so I cooked up a big pan of rice, a whole bag of frozen chicken and steamed some corn and have been making rice bowls everyday. Just reheat, add some cheese, sour cream, salsa, romaine lettuce, and olives and voila, a no cooking necessary yummy meal with minimal dishes!!
