Hey ladies! Since October is coming up quick, I'm starting to put together a list of freezer meals to make and stash in the freezer. My only problem is hubby and my son are both super picky eaters.
Anyone have suggestions/recipes for freezer meals that they want to share??

I made a few of these and they looked great! They were fairly cheap to make, too. I also made lasagna, burritos, and BBQ chicken. Instead of making the regular batch in the 9x11 pan, I used 8x8 pans to try to have more. It's just DH and me, though, so you may need more!

Whenever I cook a bigger meal on the weekend, I double (or even triple) the recipe and freeze the other half. This works for pretty much any casserole, enchiladas, shredded meat, saucy type meal (like sloppy joes, etc), and even soup.
Also just having some things prepped so you can make a quick dinner is extremely helpful (cooked ground beef or chicken, broth, chopped veggies, pasta sauce, cooked beans or rice, etc). This is all along the same lines as before...if I am cooking up beef, I will cook up extra beef and freeze the rest.
In the past, I have tried doing the whole "make 20 meals in one day" thing, which is also fine but I think the way I do it now is more efficient. I don't have to spend a whole day cooking, I just spend a few minutes extra with each meal and end up with a lot to put in the freezer.
