I've purchased 3 different ones with my previous littles and have never really noticed a big difference. I will say my personal preference are the ones that are easy to wipe down since there were lots of accidents! I believe I got them at Target or Babies R Us.
I got a sealy soybean mattress. From what I read when I was pregnant with my first is that sine the soybean is a natural fiber, it's more breathable. I will probably get the same mattress for this baby or reuse it. (If I end up putting my first in a twin bed.)
But what I what I would recommend is making sure the mattress is waterproof plastic and the edges are sealed well. That way after baby wets the bed, he/she won't keep breathing in the ammonia.
The one we got for DD is a 2-1 Serta baby/toddler mattress one from BRU. I honestly had zero preference on what mattress to get so we ended up just getting that one. She's been sleeping on it for 2 years now and haven't had any issues whatsoever.
I do suggest buying a mattress cover, though. We've had our fair share of vomiting in the crib, and the mattress cover is very helpful with this.
Second the mattress cover. I actually would put a mattress cover then sheet, the a second mattress cover and sheet so if he wet through his diaper or spit up. I could take the first layer off and have a clean set underneath. It made those 3am clean ups much quicker.

We got a really nice Serta mattress from Babies R Us for half price on Black Friday before my son was born. They had a lot of great deals if that's not too close to your due date.
We have the same one as marshmallow and we love it too. We actually had gotten another one from Buy buy baby, but when we put it in the crib there was too much room on the side and i freaked out and returned it and got the one we have now. I do use a mattress cover though.

No problem! We just had a good round of that a few weeks ago. Not pretty. She was going every 20 mins until it stopped. I used up all but one of our crib sheets before I started putting layers of towels on her bed. Worst part is when DH was cleaning her up in the bathtub for one of those times, she was crying saying, "Nasty Emily, nasty Emily" with a really sad voice. Oh, it about tore my heart out! =((
