What are you eating these days? I need to meal plan. We have nothing in our fridge after traveling so I'm starting from scratch which is nice and also annoying. Grocery story today.

We've been doing a lot of grilling. Hot days + no ac = 80* inside, downstairs
Yuck! That's miserable. We don't turn the oven/stove on if it's over 90 because our AC doesn't work that well and it ends up being 80 in the house after I cook
Hmmm...hot days and meal planning? You could make cold salads in bulk like chicken salad, egg salad, quinoa salad, kale salad.....Usually lasts 3-4 days. (depending on whether or not mayo is in the recipe)..
I like to cook up a bunch of sweet potatoes and eat them all kinds of ways, cold in a salad, hot with an egg on top, or mashed alongside bbq.
for quick easy mornings I like the Udi's Gluten-free bagels with avocado, egg, and tomato (sometimes no egg, sometimes cream cheese instead of avo).
I've bbq'd up a bunch of salmon and eaeten for dinner one night then the next day made a scramble then for lunch made salmon salad. But I can hardly handle the idea of that right now, but pre-preggo it was great.
I always like having a lot of cooked beets in the fridge - for salads, sides, mixed with mashed sweet potatoes.....whatever.
I just meal prepped yesterday! Had a major craving for pizza so I made pizza zucchini boats to try and trick my brain/body into eating more veggies and less carbs. AND IT WORKED! It's super easy to make so here is the abbreviated recipe: Chop zucchini length wise (and quarter if it is a really large). Throw in boiling water to soften a bit. After cooling scoop out the insides of the zucchini and mix the insides with whatever toppings you love. Throw everything back in the zucchini and bake at 350 until cheese is all melty and yummy. So good! I made stuffed peppers (stuffed with quinoa, spinach and sausage) and I also just grilled up some chicken breasts and veggies to have on hand for whatever. I made egg muffins for quick breakfasts (took some grilled veggies and bacon and put in bottom of cupcake tin, poured beaten eggs over top and baked for 15-20 mins). Funny thing. After making all this yesterday I ate granola and fruit for dinner.
Last night was lemon shrimp risotto tonight is no fun, garlic chicken, green beans and rice. But honey bunches of oats for breakfast every day and tomato, sea salt and olive oil everyday too.

It sounds like we eat pretty similarly. These are all good ideas! I spent first tri in a carb daze (rice, GF bread stuff etc) and finally feel like myself again so I'm excited to cook - but things like by less burgers and salmon still sounds terrible

I've been struggling with eating meat so I made turkey tacos with black beans and tons of tomatoes and salsa. My coworker even commented "you're eating vegetables!" When she saw my leftovers.
Jk... I need to be better with that....I've been living off snacks too...yogurt, granola bars, string cheese, wheat thins, fruit (especially apples and clementines).
My DH and I have crazy schedules and don't eat together a ton, so it's sorta hard to stock too much meal stuff in advance.
Everyday is different for me. Tonight im making steak baked potatoes and corn on the cobb last night i had chicken noodle soup. I live day by day and it sucks cause i usually plan my meals a week ahead .
I meal plan. This weeks meals are lasagna, chicken, tri tip, pasta and a fondue night.
DH and I just started doing fondue night! I love it!!!!!! My fav restaurant is fondue but we would easily pay over $100 for dinner when we can do the same thing at home for less than $20!
I eat oatmeal or cereal every morning. I have a baked potato with cheese and Greek yogurt and a little salt for lunch (protein!!), I snack the rest of the day on fruit, cracker & cream cheese, and veggies. I've had a tough time with meat. I are chicken in the crockpot for dinner yesterday. First meat I've eaten for a while! I love slow cooker recipes.
On the menu for dinner tonight is linguine fini with shrimp and sauteed peppers, onions, mushrooms, zucchini, and yellow squash. (That my Italian dad who is an awesome cook dropped me off...definitely pregnancy perk!)

Haha yeah (cooked) salmon still digusts me but for whatever reason raw salmon does not...which I had yesterday
It's so hard to consider meal prep when my moods and cravings differ so much.
Another thing we do at home is cook up carne asada, which isn't totally grossing me out right now (trader joes has a really good pre-seasoned one) and we slice it up then make lettuce wraps with either iceberg or butter lettuce (whatever looks better for wraps), add avocado, maybe tomato, some sauces...even mango or pineapple slices. You can get pretty creative and make a bunch of different ones. On the side I'll usually do mashed sweet potatoes or a chips and salsa....depends. For whatever reason, that's my fiancé's favorite meal. He is always asking to make that. Easy for me cuz he bbqs and I basically slice an avocado and rip off lettuce pieces. Lol..
Reading these is making me crave food even though we just ate. For the morning I either have a breakfast smoothie (frozen fruit, plain yogurt, orange juice, and seeds) or yogurt and granola with fresh fruit and seeds, so almost the same thing. Lunches vary between sandwiches or left overs. I don't really plan meals very far ahead but like to mix it up. I really wish we had a BBQ because we love grilling especially in the summer, then you can pair that with salads and baked potatoes. Tonight I made beef massaman curry, last night I made pulled pork sandwiches, now we have some left overs, next up will either be stuffed peppers or white chicken chili. I also love doing spinach salads with meat for dinner, so tasty and healthy.
I don't know how you ladies make such fancy sounding meals.. The most I've done all week is scalloped potatoes baked in cheese with ham. Tonight I'm doing an easy casserole. I don't know how you do it. I would be no help for your meal plan. Heck. I have sloppy joes on my list.
I am so impressed right now. I didn't even want to make a sandwich tonight and y'all are out there cooking fancy stuff. I definitely feel like a bum. Haha. Our oven broke this past weekend so I'm kind of limited. But I love finding new things to cook for us because my specialty is baked chicken and mac & cheese. Husband doesn't complain, but I want new stuff.
A lot of fruit and cheese sticks! My dinners are still pretty random. One day I crave something actually healthy like grilled chicken with some veggies and the next, all I want is pizza and chicken wings! Lunches are usually well balanced and I try and have whole wheat toast or a half a bagel for breakfast with a yogurt or piece of fruit. I like to eat waffles with cashew butter, too.
