It's definitely going to be a pain, but totally doable. You just need to be okay with sitting around for a long time while your in-laws go on rides, or they need to be okay with taking shifts watching baby while you wait in line and go on the rides too. I can't remember what the pass is actually called, but they also have basically a parent pass that allows for people to alternate going on the rides, and then the person sitting out can go through the fast-pass or single rider lines and not have to wait as long. I'm not sure if they still do this with the new wristband tickets, but this is how it worked a few years ago.
Search the Disney website, because they'll have the most up to date information. I do know for certain they have breast feeding rooms, stroller rentals, changing tables, etc. Look on Disney blogs too, you'll get a lot of firsthand experience. Wish I was going with you!!
I would suggest walking with the baby in a carrier most of the time, but for the time of year you would be going, it could get painfully hot.
If you really just want the vacation, you could always skip the park, or go for a half day, then just hang out with the baby at the hotel, a beach, ect. There are a lot of good tip/blog links on Pinterest if you search Disney vacations.
Plus a lot of the rides at Disney allow for lap riders so as long as LO can sit up on your lap with his head up, which should happen by 5mo, they can ride too. And the rides they can't go on, you can child swap, everybody waits in line then at the front of the line one person takes the baby to a room for child swap and everyone else rides. Then after the ride someone else sits in the room with the baby and everyone else gets to go again. No special pass is needed, you just tell them you are doing child swap. The only problem is they have to be out of the stroller to go through the line so it doesn't work so well if they are napping.
Disney is really baby friendly, they have rooms all over the park with rockers you can go to nurse. There are changing tables in those rooms too. And they let you bring any food or formula in to the park for babies as well.
DS was really good about sleeping on the go so that was helpful. I agree with pp that flying would be your better option, a two day drive with an infant doesn't sound too fun, but it could go great!
