I somehow managed to get a lasagna ready. Waiting for H to text me from work so I can put it in the oven It took me about 2 hours to get ready since LO would not sleep well today.
We normally meal plan for the week, but since I'm dropping off our 4-year old at my mom's house for dinner and a sleepover, we left tonight blank. Honestly, it will probably be cereal with fruit and and we'll split the avocado in our fruit basket. Not nearly as gourmet as lasagna, but easy and yummy.
Grilled chicken and quinoa. I cook during baby girls afternoon nap! Dinner usually has to he reheated a bit but I don't have to worry about cooking while she's awake.
Freezer meals and make ahead meals! Burrito "pie" casseroles, spinach and asparagus quiche, pineapple chicken, hamburger patties, taco meat all prepared this past weekend and frozen. Bought a huge box of spring greens to have in the fridge...just grab some and we have a salad on the side!
I made enchiladas. Husband brought home a pizza. He was trying to help. I tried not to bite his head off but a little communication would've been more of a help!
Whatever my parents cook (they live next door)! I did cook dinner a couple of times in the last week - new potatoes, steamed beet greens or swiss chard, and grilled stuff (pork chops, burgers). Lunches for me have been leftovers, either from dinner or frozen stuff. The most consistent stuff I've made is my lactation oatmeal & lactation chocolate haystacks. Bring on the milk!
I still have about 23 meals in the freezer - thank goodness I made those while pregnant!! I've cooked one meal since having DS and that was frozen fish, vegetables and rice. So nothing fancy by any means. I can't imagine having the time to chop and sauté anything right now. We have been living off of the casseroles I prepared before, take out a couple of times, and meals dropped off by family.
Lazy man's shepherds pie- just mix the mashed potatoes, ground meat, and corn together and serve in a bowl- forget the oven! Fried rice with sausage another night. Spaghetti. Salad greens a staple. Always make more than I need for leftovers. I also baked scones and choc chip cookies. They have been great to have in the pantry!
