Meal Plan Monday 7/6

What's planned for dinner this week ladies?  I have to say I didn't start meal planning until after DS was born and when I was pregnant with him our dinners were all over the place. Sometimes I don't eat what I make for everyone else because it just doesn't appeal to me---but for the most part I have it in my head that this is what's for dinner and I try to eat at least some of it. Give meal planning a try!

And I love some of the news ideas that I have been getting from those who have been posting every week!

Sunday: Steaks and leftover salads (potato, pasta and coleslaw)
Monday: Tacos and fresh guac
Tuesday: Chinese take out
Wednesday: Crab cakes, rice and tomato salad
Thursday: Pasta with mini chicken meatballs in a tomato cream sauce (trying a new pinterest recipe: https://www.littlebroken.com/2015/04/07/orecchiette-with-baked-mini-chicken-meatballs-in-tomato-cream-sauce/)
Friday: Pizza

    Homemade pizza

  • Sunday - Smoked ribs with corn and watermelon
    Monday - Steak with potatoes, mushrooms and onion 
    Tuesday - Chicken with spaghetti squash, broccoli, mushroom and sun-dried tomatoes
    Wednesday - Meatloaf with summer squash (yellow and zucchini) 
    Thursday - Thai Chicken with broccoli, onion and mushroom 
    Friday & Saturday are decided on a whim

    M: fish tacos and salad
    T: crock pot barbacoa beef
    W: tomato soup Mac and cheese
    Th: crock pot chicken wings (found a pack on good markdown)
    F: leftovers
    Sa: leftovers or whatever H makes (I'm working)
    Su: homemade pizza

    I also plan to make a Mexican pasta salad for lunches this week and some homemade spaghetti-o sauce for the freezer.

  • @SarahS06 - There is no recipe, but here is how we normally make it. Hubby grills the chicken, with whatever spices he decides that night, while the spaghetti squash bakes in the oven (with a light coating olive oil). Once those are done we cube the chicken and pull the spaghetti squash while the broccoli and onions cook in a pan, with again, whatever hubby decides to throw on it. Once all that is done we combine it all in a big pan and cook it together with mushrooms, black olives and sun dried tomatoes for just a few minutes. Nothing crazy original but it cuts out the actual pasta for something a little healthier.

  • This is what I'm going to attempt this week:
    M: Steak and veggies skillet
    T: Mini garden meatloaf muffins with spinach feta mashed potatoes (usually make extra for lunches)
    W: Pesto ranch chicken thighs in crock pot
    Th: breakfast for dinner - probably waffles and maybe eggs
    F:Mexican skillet pasta
    S: 7 vegetable minestrone soup with crusty bread (will make a huge pot so I can freeze leftovers)

  • Dudes you are all so good. I hate cooking and I'm no good at it. I should be meal planning right now but I don't want to! I have no idea what dinner will be tonight
  • @Bfavors Do you have a recipe for the pesto ranch thighs? I've been on a pesto kick lately, and have some thighs in the freezer.

    8 chicken thighs
    6oz jar pesto
    1 ranch seasoning packet
    1/2 c chicken broth

    Put chicken on bottom, pour everything else on top. Cook low 6-8 hours. I usually pair with mashed potatoes.

  • M: Chicken flautas with guacamole, rice and side salad.

    T: Tortilla chip and pepper jack crusted chicken with mash potatoes and salad.

    W: Mini chicken pot pies with macaroni and veggies.

    Th: Shredded beef burritos with rice and salad.

    F: Philly cheese steak sub sandwiches with chips.

    S: Baked Pork Chops with Mash potatoes and salad.

    Su: Brisket with Potato salad and rice.

    Wednesday: tamales with chili

    Saturday: hopefully pizza

  • These great-looking meal plans are killing me! Mine looks more like: Monday: Chipotle, Tuesday: Chinese?, Wednesday: probably Chipotle, Thursday, screw it, let's go to Chipotle. I have no energy for cooking and I don't think I am going to get any unless I win the lottery and get to quit my job. I should invest in a frozen meal delivery service, I think there are a ton in my area. 
  • So far...

    S-- my dad made "surf and turf" for us--grilled flank steak and salmon with salad and grilled corn.

    M--grilled chicken, roasted sweet potato and broccoli

    T--homemade pizza with Swiss chard

    W--pasta?

    And that's all I've worked through so far.
  • I am so impressed by this. I really give myself a hearty pat on the back if I cook one time during the week. Oops.
