Post Your Favourite Healthy Meals!

Hey ladies!

I am looking to add some new healthier meals to my repitoire. Share your favourite healthy meals that you enjoy during pregnancy (or anytime!).

My favourite is chicken burritos, with homemade guac and Greek yogurt, with a side of Mexican style one pan quinoa dish (with black beans, corn, fire roasted diced tomatoes and cilantro).

  • My H doesn't like food that tastes healthy. One of our favorites is spaghetti squash casserole. We don't eat paleo, so I add cheese mixed in and on top.

    Also, in the summer, I like cold salads. I have a good thai coconut rice one, plus the typical black bean and corn, etc.

  • One of my all time favorites, quick, easy, delicious dishes is what my mom called "Mexican chicken" growing up. I don't know if it's for sure healthy, depends how much cheese you put in it I suppose. Hahaha

    Brown some chicken breasts, once browned toss in a can of diced tomatoes with chiles (you can customize this by doing original, mild, hot, etc.) and cover. (You may want to add a can of water just for a bit more liquid) Once it's fully cooked, sprinkle some shredded cheese on top, recover until it melts.

    We like to eat it on top of some brown rice and corn.

  • I also LOVE tacos so to make them healthier we do ground turkey and instead of shells we use lettuce leaves. They taste so yummy and you don't feel like crud after eating 4! Hahaha

  • Yeahhh.. we just had Spaghetti casserole. We use rotini noodles, spaghetti sauce and turkey meat. Mix it all together and put it in a casserole dish and top it with mozzarella cheese. You could use whole wheat noodles and make it real healthy.  :D

  • Another favorite is Aldi orange chicken (I have yet to brave making my own) tossed in rice and green beans.

  • Low carb recipe I've done before is spaghetti squash Alfredo (I think it's high in fat though from the cream in Alfredo sauce). DH liked it which is rare - he hates when I "healthify" foods.

    I like the website Budget Bytes. They're fairly healthy and really budget friendly recipes. She had a recipe for meatloaf muffins that are awesome. Includes grated carrots, spinach (i think? Can't remember) and zucchini

  • We also really like coconut curry. I add in veggies to bulk it up and stretch it further, and for extra nutrition. It's really pretty healthy, since I don't consider fats like coconut milk bad for you.

    Thanks for your recipes and ideas, everyone! Like many of you, my hubby isn't a fan of healthy eating so it's a struggle trying to me dinners and lunches that accommodate my desire for something healthy, and his for something "that tastes good and is filling" lol. @VitaLuna I love coconut curries as well and think I may make one tomorrow with quinoa!
