I don't know about you... but I LOVE grilled cheese. Big time. I eat them way too often, but my problem is that they're starting to get a little boring. Do you have a favorite topping/recipe for grilled cheese? PLEASE SHARE!
I'll add in canned chicken or tuna to change it up a bit. Or make it a melt with a tomato. Quesadillas are always pretty easy to spice up with sour cream, salsa, or guac.

Bacon in grilled cheese is PHENOMENAL! Panini's are also pretty fantastic. Like a grilled cheese, just has more in it. Turkey or ham, or turkey AND ham with some swiss cheese......ok just had tacos for dinner put getting hungry again.....
There is a food truck in my area called "The Happy Grilled Cheese." Best.Food.Ever. Look on their website for some amazing ideas. Tomato, Mozzarella, and Pesto Grilled Cheese or PhillySteak Grilled Cheese.
So many greats have already been said but I'll add 1)southern style - with pimento cheese (and fried green tomatoes if you've got em) 2) fancy - with sliced apples and (pasteurized) Brie
P.S. - this thread totally lead to me making grilled cheese and tomato soup. I think I felt my heartburn go up 10 notches with my first spoonful of soup! So.Worth.It.
We have a food truck called the meltdown. It's amazing, and now I want it! Candied bacon, muenster, and Gruyere, yum! My second favorite is Brie and green apple grilled cheese!!
My "go to" is rye bread with mozzarella, tomatoes, and a sprinkling of dried basil if I don't have any fresh on hand.....but my absolute favorite is a hearty sourdough with goat cheese and honey. OMG. Sweet and savory to the enth degree.
I'm pretty sure I eat one about very other day (at least!). I switch them up all the time with different breads, meats, veggies, etc. it's REALLY good with pumpernickel. I use ham, salami, or pepperoni a lot. Tomatoes are delish (or dunked in tomato or chicken soup). It's amazing with mozzerella, basil, and tomato. Pesto is a great option. You can't go wrong with ketchup. I've heard avocado is good (but I don like avocado). However, my all time FAVORITE grilled cheese (which I really need to recreate one of these days) is made by this restaurant about a half hour from me. They make it on ciabatta and put on cheddar, mozzarella, tomato, olive oil, fresh cracked pepper, pesto (or just fresh basil if you don't like pesto) with a side of balsamic reduction to dip it in. It's AMAZING!!!!
I had grilled cheese for dinner last night ! I was so hungry I had hubby make me two... I can definitely say I've never eaten two grilled cheeses in one sitting before. Now I'm hungry again... Damn it.
Ham or turkey is good on a grilled cheese. I love using the Velveeta slices. So yummy. And after I saw this post last night, hubby and i had to have grilled cheeses for dinner lol. And it's 5am and I want another.
I saw one from Martha Stewart once that was some sort of white cheese (white cheddar maybe) and thin slices of green apples. It looked pretty darn good and I'm sure you could get the recipe by Googling
Mozerella, tomato, and pesto is my favorite! Bacon is obviously amazing I'm not a fan of tomato soup, but I like dipping my plain grilled cheese in marinara sauce
