Meal Plan Monday

Sunday: Sandwiches (we had a wedding earlier in the day with a big meal)
Monday: Chicken and veggie alfredo (a craving I've had for a week now!)
Tuesday: Chicken taco chili
Wednesday: Burgers and pasta salad
Thursday: Pulled pork and potato salad and coleslaw
Friday: Pizza or leftovers if we have them
Saturday: Grilling out lots of goodness for the fourth

    Monday: idk
    Tuesday; leftovers (swim lesson day)
    Wed: whole crock pot chicken veggies and idk
    Thurs: leftovers or quick food because swim lessons
    Friday: not sure we have company coming for lunch

    Trying to decide this reminded me we need to go grocery shopping we basically only have chicken in our house

    I wish I had a plan this week! My brother is coming Thursday and is an "amateur chef" so Thurs-Sat are a surprise!

    Tonight we are having roast beef, mashed potatoes, gravy and green beans. Cooking in the crockpot so hoping the smell doesn't kill me!

    I really need to start meal planning again but the nausea is killing my cooking skills.

  • Ugh I started out strong with the meal planing but fading fast!

    Monday- crockpot chicken with veggies

    Tuesday- dinner at In laws

    Wednesday- lentil soup and bread

    Thursday- maybe tuna salad sandwiches, hubby won't be happy! What's the rec on tuna anyway? Like once/week?

    Friday- pizza

    Saturday- 4th cookout

    Sunday- dinner with my parents

    I love that someone cooks for us twice a week! Having parents nearby is awesome.
  • Monday: Chicken Enchiliadas w/ rice and beans.

    Tuesday: Mushroom and Butter baked pork chops with Mash potatoes and veggies.

    Wednesday: Chicken and Asparagus Pasta with veggies and Italian bread.

    Thursday: Spaghetti with Meatballs and side salad

    Friday: Roast beef sandwiches with veggie chips and pickles.

    Saturday: Burgers and Hot dogs with Chips

    Sunday: Take out.

  • I have been doing terrible with meal planning lately due to nausea, but this is the plan so far:

    M - Cornish game hens baked, corn on the cob and either salad or baked potato

    T - Chicken fajitas

    W - Grilled salmon and baked potatoes, garlic toast

    Th - Grilled chicken/swiss sandwiches, homemade fries with parsley

    F - most likely take out, there is an amazing Chinese place that has the absolute best fried rice or a local pizzeria 

    Sat - Grilled turkey burgers, corn on the cob and potato salad

    Sun - Pizza or Pasta of some kind

  • I'm cooking 5 pounds of ckn in the crockpot today to shred and divide for meals. I'm more likely to cook if I don't have to do a lot of meat prep.

    Monday: ckn tacos
    Tuesday: King ranch ckn
    Wednesday: Ckn Pot Pie
    Thursday: Lasagna
    Friday: prob King Ranch Ckn again (family fav)
    Saturday: DH and the boys are headed to a cookout, I have to work so prob leftovers for me.
  • This is why the board is driving me crazy. How did MPM get bumped to the second page already?!? MPM is my favorite!

    Also, as a general PSA to anyone that is new to meal planning.. Stick with it! Especially if you're a FTM, it is an absolute life saver. I wish I had gotten into the habit while pregnant the first time. It would've saved me a lot of headache. But, a year in, I finally got in the habit and it makes a world of difference, especially for working moms. Anyway...

    M: steak and bean enchiladas
    T: leftover coconut curry
    W: grilled cheese and tomato soup
    Th: spaghetti or leftovers (I get home at 8:15p three days a week)
    F: homemade pizza with roasted red pepper cashew sauce. I can't wait!

  • @Texasmom7137 what do you put on your chicken in the crockpot? The only way I've ever done is with a jar of salsa, i'd love an idea to use regular seasoning.

  • I know, I am really wondering what she does/puts on her chicken in the crock pot, Ive only ever done that for chicken in mexican dishes and used Salsa. Its a great idea to cook chicken ahead and shred it, you could do a lot that way I just dont know how to cook it plain :/ Maybe a pinterest question or maybe she will share her secret, she may not use that same recipe but its the only one ive ever seen for it. @MrsJG3

    If I am keeping it really generic I usually do a cup of Ckn broth and just some pepper and either Italian seasoning mix or Mrs. Dash Garlic and Herb. Today I put in Fajita Seasoning, sliced bell peppers and onions and a cup of water. We do a lot of TexMex type food and that is what I have been craving so even my ckn pot pie will have a bit of spice. My kids love spicy food too.
  • My King Ranch Ckn is
    2 Cans Cream of Ckn Soup
    2 Cans RoTel (we do milder but Med is great too)
    About 2-3 Cups of cooked Ckn (shredded or cubed)
    Corn Tortillas (cut into 1 in squares)
    Bell pepper chopped
    Onion chopped
    About 2 Cups of Cheese (I actually use a bit less)

    Cook onion and bell pepper in skillet
    Add Ckn, cream of Ckn Soup, Rotel
    Cook until heated through

    Do a layer of tortillas in 9x13 baking dish, add 1/2 Ckn mix, sprinkle some cheese

    Repeat with layer of tortillas, Ckn mix, cheese

    Top with one last layer of tortillas

    Bake at 350 for about 25 minutes
    Add cheese on top if you want it cheesier( I tend to leave this off but DH adds it) bake for 5 more minutes

    This refrigerates well and makes great leftovers.

    My sentiment exactly. DH would probably never get a home cooked meal during 1st tri if I hadn't started using the crock pot so much.
  • Kudos to all of you! The only thing I can muster is takeout or a bowl of cereal :(

    I'm hoping once I can actually stomach the thought of meat I'll get back at it, I would always meal prep on Sundays.

  • Monday: ground beef tacos
    Tues: breakfast for dinner
    Wed-fri: not sure. Probably burgers with steam fresh veggies one night.
