I didn't see this answered in other gestational diabetes discussions on here so I figured I'd ask. What are some of your go to's for snacks and meals? I was recently diagnosed and am doing my best to keep my sugar in check through diet/exercise alone. I need variety and sweet stuff though.
Right now I'm doing green beans with parmesan, nuts, or a piece of fruit for snacks. I did have a 1/2 cup of ice cream the other night (the carb count was 18 for that amount) and it was heavenly. Any suggestions you've got to keep this mama on track with her goals would be greatly appreciated.

Edit: I've done a little more research into the information I was provided and online and realized I'd assumed all meals had to stay under 30g of carbs. What I've read since then is that's only for breakfast and I have up to 60g to play with at lunch and dinner. That's helpful.
Edit 2: It's almost less about what I'm craving than the fact that I'm constantly hungry right now. About every 2 - 3 hours I want at least a snack.
I bet there are some GD Facebook groups or blogs with ideas too.
I am fearing this. I failed my early 1 hour by 2 point and have to take the 3 hour. I still puke if I go more than 3 hours with out eating so my midwife gave me a few more weeks to do it. I had a 9 and a half pound baby last time so I have to test early.
Those people know how to use cauliflower in some pretty amazing ways - rice, pizza crust, etc.

My daughter weighed 9#3oz by the time we got to weighing her 2 hours after birth but she had pooped 3 times! The nurses guessed she was actually closer to 10, if not more.
Edited to add: I was also a week overdue and had been on bed rest for 6 weeks due to high BP. Of course I grew a big baby! And my husband is 6ft3.

I got tested for GD already also because DS was over 9lbs. He was 2 weeks late and I had been on bed rest for 4 weeks. Towards the end of your 3rd trimester the baby can gain up to a pound a week. Of course we are going to have big babies when they take their sweet time coming out.
My mom had GD when she was pregnant with my sister. She was a month early and almost 10 pounds.... in a situation like that I completely understand testing early for GD with future pregnancies.
For DD, I also got tested early, passed it, but still had to do a 3 hour because I was gaining so much weight (still passed it too). My baby was about 10 lbs and we both suffered injuries at her birth. This time, my OB is trying to avoid my previous experience by having me count my carbs and not gain so much weight. It is awful because I love rice and pasta.
To curb my carb cravings, I've been eating cheese, pan-fried salami, olives, pickles, natural pb and banana (made like a sundae) and hard boiled eggs. These are for snacks and the eggs are for breakfast as well. It still stresses me out because I feel like where I'm cutting in carbs, I'm just adding a ton of fat and salt.

Exactly! All I did was eat and sleep for 6 weeks. Of course I grew a big kid! And she has stayed huge too.

This is the run down of what they are. They sound kind of icky when you just read about them, but they can be really good! They do make an unholy mess of your kitchen as a heads up and start to melt very quickly when you start to eat them.
Anyone who is just trying to be lower carb and not necessarily "keto" could probably play with a recipe to make it less fat/slightly higher carb. That website has a master list of several other fat bomb recipes that sound delicious!
