I feel stupid asking this, but I've been dying for penne pasta with vodka sauce, but I have read conflicting views on whether the alcohol "cooks off" or not in cooking. Any ideas ? Going to a party tonight where they will be serving it.

It has to cook off otherwise it would be illegal to sell the dish or sauce to anyone under 21.
