With cookout season here and our inability to enjoy a nice cold beer or margarita, we might as well enjoy the food, right? So let's share some of our favorite summertime recipes. Here is a good one for an easy (delicious) frozen dessert: 8 oz of cream cheese, 1/2 cup of sugar, large can of crushed pineapple (drained), 10 oz of frozen strawberries, 2 bananas cut up, 1/2 cup of walnuts (optional), large container of cool whip. Mix it all together and then freeze it in a gelatin mold or any container - I am kind of ghetto so this past time I put most of it back in the cool whip container and then the rest in another plastic container. Serve frozen (or if in a mold, flip it onto a plate and let it be "thawing" as people cut off pieces or scoop off. Super yummy

Tostito Dip (Green Goddess)
2 green peppers
3 cucumbers
l Lrg bunch of green onions
4 tomatoes
1 Lrg can black olives
4 cups of shredded cheese
1 bottle of green goddess salad dressing
Eat with tortilla chips. Also good on a salad, in wraps, with eggs etc.

-Two cans of black beans (washed & drained)
-Two cans of corn (drained)
-Two tomatoes, diced (more, if desired)
-Two jalepenos, (de-seeded and diced)
-One onion, diced
-Two limes (juiced)
-Fresh garlic (as much as desired)
-Fresh cilantro (several sprigs, chopped)
-2 tbsp olive oil
-Salt and pepper (as desired)
Mix all ingredients together and chill in the fridge for several hours prior to serving! (You don't have to do this, but it tastes better!) Serive with tortilla chips or as a side dish! (I sometimes grill chicken and add in as a salad!)
