I know that many of us are dealing with a restrictive diet, as a result of GD, so I thought I would share a dessert recipe that works for me! It is by no means low fat, but it is low in sugar and has never raised my number (when eating at night).
Vanilla Bean Panna Cotta
1 packet gelatin
1 cup whole milk
3 cups heavy cream
1/2 tsp vanilla
half vanilla pod seeded
1/4 cup sugar
pinch of salt
Pour 1 cup milk into a bowl and sprinkle gelatin packet on top. While the gelatin is soaking with the milk, measure out and combine the sugar, cream, salt & both vanilla (I seed the pod and throw it in with the cream- you can take it out when you are pouring later).
Over medium heat, whisk the milk/gelatin mixture for about 4 minutes... til its hot but not boiling. Stir in cream mixture and whisk until sugar is dissolved and the mixture is hot, but not boiling (5 minutes).
Pour into 6 ramekins/bowls/whatever you want- take out pod and discard.
Let cool on counter then put in fridge for 6 hours.
I have one a night, and I found this yummy, low sugar, raspberry sauce that I put on top.
