Meal ideas

I am pre diabetic and was told my pregnancy is going to be looked at as though I'm diabetic, based on how high my sugars have been lately. I have to really watch what I'm eating and need some low carb healthy meal ideas that don't involve mushrooms. I'm open to trying virtually anything else. What are some of your go to meals?

  • I try to eat a lot of dairy -- cottage cheese, cheese & apple, yogurt, hummus & veggies, berries, cashews or walnuts for a snack.

    For meals, perhaps make your favorite taco meat and serve over salad. Soups can be filling, just add lots of veggies. In the summer, DH grills a lot, and I make frozen veggies, slice a tomato, and call it dinner. Good luck!

  • Try anything whole grain..so I'll make whole wheat pasta with lightly sauced sauce... I was told that I need to be carwgull w diabetes because everyone in my moms side of FAM is diabetic..so I'm on a no white rice bread or pasta kinda diet, I try to eat a salad w mostly greens during lunch and dinner and then a little bit of protein so chicken fish steak..... I also stay away from fruit juice unless its a fresh squeezed and limit that to a cup....the doc actually told me to not drink any kind of juices to stick to water...also walking and working out helps a ton !





  • I use to do low carb dieting.  I would always make a salad with cauliflower, broccoli, shredded cheese, eggs, bacon pieces.....then you just take some mayo and mix it with water in a bowl to the consistency you like....pour over the ingredients and mix.  Nice easy side for dinner.  Taco salads minus the shell.

    Also keep plenty of cheese sticks, hard boiled eggs and nuts on hands for quick snacks!  The Chester Cheetah puffcorn in the chip aisle is low carb.  I also would buy the low carb tortillas and spread peanut butter on them and roll them up.  Lots of options!

  • Jimmy dean breakfast bowls have been super wonderful for breakfast for me! Keep me full, plus a lot of protein while easy on the carbs. Make sure you are eating a good bit of protein. Check your yogurt and make sure it is low carb but high in protein. I like the lite and fit greek yogurt. I tend to go towards carrots and peanut butter if I am hungry. They make a whole grain pasta with protein also that is actually really good. There are a ton of possibilities watching your sugar (I have GD)! Be sure to check out pintrest!
  • I've been craving salads anyway, so is be doing every kind of salad there is. My other favorite low/no carb meal is spaghetti squash with whatever you want on top.

    yes the spaghetti squash is surprisingly amazing. It's so easy to cook, pair it with a low carb marinara sauce and some homemade ground turkey meatballs. It's so delicious you'll feel like you're having a big bowl of spaghetti. There is a great recipe for this in the 17 day diet cookbook
