Re: Celiac - any insight

  • My BIL and nephew have celiac.  The whole family pretty much eats gluten-free, because it's just easier that way.  I think it was definitely an adjustment at first (there's gluten in everything), but I don't think it's too much of a big deal now.  They can cook gluten-free versions of pretty much anything and have a whole bunch of celiac-friendly products, brands, and restaurants down to memory.  It probably helps that so many people who don't have celiac want to go gluten-free these days--there's a lot out there.

It can be expensive, but apparently if you spend enough of your income on gluten-free food, it's tax-deductible as a medical expense (although I'm not sure if this is a state or federal thing).

  • I have been gluten free for seven years. I tested negative for celiac but have the gene that can predispose to it and going gluten free fixed all of my symptoms. My GI says that it is possible I actually do have it but the tests were negative. It is a little overwhelming at first to go gluten free. Gluten can hide everywhere. I read Living Gluten Free for Dummies and it was very helpful. You have to go through and look up every food in your house plus things like toothpaste, etc. You will need a dedicated gluten free toaster (or I use a toaster oven and just use foil for things I want toasted), you may want to replace some pots and pans that may be contaminated. Another great resource is the message boards on celiac.com. People post all sorts of things about different restaurants, products, etc. If someone calls a company to confirm if something is gluten free they post it here. If I can help you with any questions please let me know.

  • I don't personally have any experience, but there are a few bloggers out there who have Celiac and share recipes all the time. If I remember correctly, IowaGirlEats.com was dx Celiac after she had her kiddo last year. Her regular recipes were awesome, I assume her gluten free ones will be great too.
