TTC after 35

Friday lent dinners.

I'm running out of things to make so let's share our non meat dinners.

I'm vegetarian so every day is a no meat day but I have to feed my husband and son (daughter goes to college at night so she feeds herself). The tricky thing is my son won't eat fish so that's out. My husband is happy eating pasta every night( he is VERY Italian) but I only make them pasta once a month for health reasons.

I think tonight I'm going to make a potato leek soup with some nice crusty bread. I hope that satisfies them. I'm used to eating light meals but my boys aren't so I always am afraid they won't be satisfied and start looking for snacks right after dinner.

If you have any good non meat ideas please share.

    DH will eat black bean burgers but no mushrooms. And my son has turned into a picky 10 year old. But he will eat soy "chicken" patties. Maybe I will do that with salad next week.

  • @hooligans4 - well that sucks.  We're big meat eaters so I don't really have many other suggestions.  Oh - nobody in my house likes chili beans so I make green bean chili.  We don't usually put any meat in that.

  • My hubby and I love tofu tacos. 

    LOVE LOVE LOVE them. We fed them to my daughter once and she had no clue....just ate them up. 

    We do the corn shells cooked in oil and the tofu cooked with the pre made taco seasoning or a seasoning blend i make. GRUB! 

    Ive been eating a lot more vegetarian meals over the last couple months and I actually prefer it...the only problem is if i wanna LOSE weight i have to incorporate meat into my diet heavily. ;(

    @hooligans4 We've been short on time and cash lately so pot-o-beans has been our answer to everything. We usually add a little meat for flavor but because of Lenten Fridays I have been working without meat. This week was pinto beans, canned stewed tomatoes, kale, clams, olive oil for fat, onions, garlic, cumin, salt, cayenne - toss in pressure cooker and cook until beans are buttery. Normally that takes a few minutes but we are at the bottom of a 25 lb bag of beans so with the elderly beans we leave everything cooking for a good 20-30 mins.

  • @OldNell that sounds heavily. That's going to be made really soon. I'm guessing you serve it over rice?
    I would quinoa but my boys would do rice.

    The pinto bean version is heavy and tomato-based so I like it over rice. This week I made a garbanzo bean version with tomatoes but without tomato paste or tomato sauce (which I think I forgot to mention putting in above) so it has tomatoes in it but the base is just a light spiced broth. I reserve the excess broth from cooking and make quinoa with it. I cooked last night in the pressure cooker and the slow cooker at the same time so we are set for another couple of days. Hurrah for convenience cooking appliances!
