Freezer meals

I plan on prepping some freezer meals tomorrow for after the baby. Are you?

Post your favorite freezer/crock pot meal so we can all share!

  • I made and froze chicken and spinach stuffed shells. Shredded chicken, spinach (I use the frozen stuff you microwave), ricotta, mozzarella, and Parmesan cheeses mixed together and stuffed in cooked shells with Alfredo sauce on top!
    I also put together a bag of one of my favorite crockpot meals that doesn't have a name I'm aware of. Chicken cutlets, 2 cans of condensed cream of chicken soup, milk, a little bit of white wine, pepper, and Parmesan cheese. Serve over rice :)

  • So far I've made marinara sauce and meatballs, chicken pot pie, lasagna, and chicken breasts marinated in different sauces. I have yet to do some taco meat, pizzas, and muffins.

    July 2011: Referred to RE, started Letrozole
    August 2011: BFP #1! M/C @ 5wks
    September 2011 - September 2012: test, after test, after test... S/A, HCG, B/W... Diagnosis: unexplained infertility. Letrozole, Metformin... nothing.
    September 2012: Diagnosed gluten intolerance; now living strict GF diet.
    November 2012: BFP #2! MM/C @ 6wks (discovered at 8wks). 2 rounds of Misoprostal - nothing. D&C December 2012.
    May 2013: BFP #3! Hoping this one sticks! 4x prometrium/day EDD: 01/25/14
    06/03/13: 1st u/s We have a heartbeat! Team green!
    01/24/14: Team green turned team pink. Baby girl was born!
    08/05/14: Surprise BFP #4! (Unmedicated, no pp period, EDD unknown)
    08/15/14: 1 u/s We have a heartbeat! Measured 6wks 2 days. EDD 04/08/15. Team green!

  • Nope. I did it with my first, but I prefer fresh meals. Adding number four to mix does not seem any different than number three (except we have more hands to help now).

    With my first I did lasagna, chicken pot pie, soups, burritos for the crockpot. sauce and meatballs.
  • So far. Chicken and broccoli Alfredo. Beef stew. Chicken, salsa and taco seasoning in a freezer bag and put in the crockpot for 8 hours to make chicken tacos.

    Ham steak (cubed). 8 small potatoes quartered, frozen broccoli, 8 oz of cheddar cheese. Cook on low for 8 hours.
  • Crock pot cream cheese chicken chili
    2 FROZEN chicken breasts
    1 can corn- slightly drained
    1 can black beans- rinsed and drained
    1 can Rotel
    1 pack dry ranch dressing
    1Tbsp Cumin
    1tsp chili powder
    1tsp onion powder
    1 (8oz) brick cream cheese- on top

    Place chicken on bottom of crock pot, pour ingredients on top of chicken and stir- place cream cheese on top. Cook on low 6-8hrs. Stir in cream cheese. Eat with tortilla chips, wrap in a tortilla, over rice or straight out of the bowl!
  • My husband thinks I'm being ridiculous for making a few freezer meals before baby arrives. I think he kind of was offended because he'll be home the first 2 weeks after she's born, but I also know the first 2 weeks are going to be tough on him too!  I'm glad to see I'm not the only one thinking ahead. 
  • I made some with my last child. A couple are still in the freezer. She will be 3 in May. Hangs head in shame. I won't be making any this time.
  • I made/froze some sauces that take awhile to prepare.

    Lasagna and breakfast burritos so far. Also plan on making Mongolian beef, cilantro lime steak, and carne asada. Maybe some Teriyaki chicken and carnitas, too.

  • I froze some sauces, gnocchi, fried tortellini, flatbread and spring rolls. I also just froze portioned chicken and premade burgers. I'm planning on continuing to make extras to freeze.

    I double the peas and sometimes add chard to bump up the veggies.

    I also did tomato sauce and lasagna.
  • So far made goulash, and 2 casseroles chicken and rice. Still plan on making burritos, and another casserole. They will be so convenient on my kids sports days!!
