There's been a lot of discussions about food today so I figured it'd be nice to have a place to share our favorite dishes! Most of us are entering 2nd trimester or will be soon so we might actually feel like cooking!!!! So share here if you like through link or type it out!

I love fried corn, it's great as a side dish! You'll need corn, bacon, red peppers, bell peppers, and onion. Start by slicing 3 slices of bacon into 3rds and cook in skillet with onions and peppers. Then add a can of whole kernel corn with juices and all and cook down until all juices are gone. Season with salt and pepper or I actually use a Cajun seasoning and it's really good! You can substitute bacon with Italian or andouille sausage.

  • Here's a quick and easy Cajun Chicken Pasta recipe that I love. It's got red and green peppers and just enough spice without being "spicy"! They say it's a mock Red Lobster recipe....I don't know about that, I just know it's good!

Meatloaf (recipe I got from a friend): 1-2lbs ground beef, lipton onion soup packet, 1 jar beef gravy, french fried onions, 1-2 eggs (1 egg for every lb), approx 1 cup breadcrumbs.  Mix meat, eggs, soup mix, bread crumbs, and a little dribble of the beef gravy (we usually add some pepper and garlic salt too).  Put in greased meatloaf pan, cover with the rest of the beef gravy.  Bake for 1 hour at 350*.  About 15 min before it's done, sprinkle some of the french fried onions on top to crisp up before it's finished.  **Disclaimer: this is NOT healthy, but it is delicious :)
  • I'll throw in a salty and sweet easy treat. I make it when I crave something sweet but have nothing in the house. Most of the ingredients you probably have in your kitchen. I have no idea what it's actually called but I call it caramel chocolate saltine bark.

In a saucepan on low heat combine 1cp of butter and 1cp of white sugar. Stir slowly until fully mixed and caramalized (it will go a golden grown). While that it happening, grease a cookie sheet and spread a sleeve of saltine crackers in a single layer. Take the butter/sugar mix and pour evenly over the crackers making sure the are fully covered. Now spread some milk chocolate chips over the whole thing. Place under the broiler until the chocolate chips are melted (I use a spoon to spread the chocolate evenly). Now just stick it in the fridge to cool completely. Once it cold it will be nice and hard. Break in to pieces and eat!
  • Here is an awesome, and super quick recipe for Rosemary potatoes that my family and friends love, and now all make: ------ slice raw, pealed, Idaho potatoes into eights, put in a dish with a lid that is microwave safe. Add some butter to it, ie. For about 4 decent size potatoes I add 1.5 spoon of butter. I also use coconut oil sometimes. Sprinkle everything with salt, and a decent amount of dried rosemary. Put about half a glass of water in the dish, cover, and cook in a microwave some 15 minutes. Take out of the microwave, mix it to rearrange the position of the potatoes in the dish, and cook more some 5-10 minutes or until done. ------ I know that it sounds like cheating, since I always make potatoes by actually boiling or baking them, but these are so easy, and so delicious, and it is hard to get the same result by baking them. Personally, I don't believe that microwave affects the nutritional quality of food that much, so...enjoy.

  • I have a couple easy recipes that are seriously my favorite go to meals!  I make pulled pork in my crockpot, and put the whole pork shoulder in with about 1 and a half liters of root beer, then 7/8 hours later drain, shred, and add in just enough sweet baby ray's to get it wet.  The root beer makes it sweet, and the bbq sauce gives it just enough savory.

Right now I'm making my stuffed shells, just ricotta, mozzarella, parm, 1 or 2 eggs depending on how much i'm making, and a bunch of seasonings.  Can't think of them all off the top of my head, I have a ridiculous spice cabinet.  then I put parm and mozzarella in the tomato sauce, and pour it over.  it's so cheesy and just perfect.  I wish I had some garlic bread right now though.

  • I posted this in randoms earlier but wanted to put it here as well. Cabbage steaks...we tried it tonight and my goodness they were sooo good!!! Definitely a must try. I was very generous with garlic and cooked about 25 min on one side and 15 on the other, a little different than what the recipe calls for.

  • I am obsessed with these brown sugar wings with roasted red pepper sauce.  It sounds and tastes fancy, but literally takes 10-15 minutes to prep.  I like to make them as a fancy substitute for buffalo wings on game day.  I also like to eat them all.the.time.  I've also substituted the wing pieces for all drumsticks with great success as a way to make a meal instead of an appetizer.

  • Made this tonight, I'm sure most have heard of it:
Kool-aid pie tastes like lemon meringue. 1 can eagle brand, 1 package of lemonade kool-aid, and one tub of cool whip. Mix together and put in a graham cracker pie crust. Let set in fridge for an hour or more
