I don't do them because the first time around I forgot about them. By the time I'd remember, I was already beyond starving and didn't have time to defrost and cook. I know, it sounds pathetic- but it was true. I relied on hot dogs and avocados and cereal. haha. I don't recommend my way, but I"ll likely be repeating since last time I wasted a lot of food.
I've had luck with stuffed shells before = Mix ricotta and parmesan cheese (and salt & pepper to taste) and fill into the large pasta shells, cover and freeze. Sometimes I add chopped spinach to the cheese mixture to up the healthy factor.
A pot of chili usually holds its flavor and is fine defrosted, too!
Tuna noodle caserole is easy to prep and freeze and then you just pop that bad boy in the oven and it's good to go.
Also I always keep a pork shoulder in the freezer to put in the slow cooker after i defrost it. Then when it's cooked you have loads of pulled pork to freeze in meal size containers that you just microwave.
There are also loads of recipes for pot pies that you can make and freeze.
Chicken pram is a good one. I'm also going to do a casserole or two not sure what yet. And a few meals I can portion out for me and hubby to just microwave.
I plan on making some whole wheat banana muffins (freeze individually in saran wrap), breakfast sandwiches, chili, ziti, stuffed shells, chicken enchiladas, macaroni and cheese, lasanga and marinated meats (chicken, pork, etc).
I will also load up on frozen veggies, since they are much easier to prepare, and fresh veggies require weekly trips to the store which I might not want to do!
Is it bad to say lean cuisines lol. I wanted to invest in a ninja or vitamix blender for smoothies and soups. Anything that is super quick and filling will be my motto the first few weeks.
Not sure if anyone said tater tot casserole. Its not the healthiest, but it's quick, freezes amazingly, and you can customize it in many ways. I'm making it for dinner tonight.
I also like the idea of cooking pork loin in a crock pot and then shredding it. I've made bbq pulled pork sandwiches, pork loin with roasted potatoes and carrots, and used the pork loin in place of beef in stews and soups. Chicken is also versatile too.
You could google a recipe for king ranch chicken casserole and chicken spaghetti...both taste great and you can freeze the mixture for the chicken spaghetti and cook the spaghetti the day you plan to eat it. Chicken and sausage gumbo freezes well too and you can make rice on the side to add.
