GTKY - Favorite Weekday Meal

I'm making the menu for dinner next week, and I'm running out of ideas. I thought it would be cool to post about your favorite thing to make on the weekdays when you don't have any energy. Maybe this isn't really a GTKY, but it could still be fun. Let's hear them!

    How fun! I love sharing recipes :) tonight, my husband and I are having "Barbeque Beef Biscuits," which was a staple in my household growing up. It was one of the few things that all six of us kids liked! Here's the recipe for anyone who's interested: 

    1/2lb ground beef (lean)
    1/2 cup barbeque sauce
    Shredded cheddar cheese
    Pillsbury round rolls

    Cook beef. Add BBQ sauce. Mix well, set aside. 
    Place 1 roll in each muffin tin. Fill with meat and top with cheese. Follow baking directions found on refrigerator rolls. 

    This is the recipe that I use for just my husband and me - it makes 8 rolls, we usually eat 4 each with salad. I usually end up with extra beef, which my husband likes to put in sandwiches (basically sloppy joes). My mom would use about triple or even quadruple what I do. Also, clean up is the hardest part of this recipe. My mom recommends using muffin tins with either liners or a lot of Pam, but I've actually found that using an 8x8 glass baking dish is easier for cleaning, you just have to leave them in the oven for a bit longer. You'll know they're done when the rolls are golden brown. If you end up with leftovers, these do reheat really well. I love making these; they super easy and usually take less than 30 minutes total to make. Plus, if you have kids, kids usually LOVE these!

  • I love homemade soups and pasta with meat sauce! Tonight we are having pork chops, apple sauce, green beans, and crockpot Mac and cheese yum!
  • Finally finished the menu for the week! 

    Sunday - Smoked Sausage Alfredo Bake
    Monday - Beef Yakisoba
    Tuesday - Tuna Casserole (made with chicken instead)
    Wednesday - Meatloaf
    Thursday - Leftovers
    Friday - Pesto Chicken Pasta w/ tomatoes and asparagus
    Saturday - Tacos

    None of this is particularly healthy, but it all sounds amazing to me right now, so we're going with it.

  • If you have access to mojo marinade (from Goya or Publix) I make an awesome mojo chicken and rice. Take whole chicken marinate overnight in mojo face down. Bake in oven with carrots, onions, red potatoes, and pour over extra marinade. Serve with yellow rice and corn. I make a bowl of it with shredded lettuce and chopped tomato and it's like a TropChop from Pollo Tropical. So good and healthy. Plus reminds me of growing up in Miami. So far from that kind of food now
  • We made "hamburger stew" Sunday night and it is GREAT on a cold night after work. Chicken stock, potatoes, ground hamburger, peas, carrots, spinach, tomatoes, onion, and any other veggies you have on hand. Salt and pepper to taste. It also freezes really well and perfect to pull out and defrost in a pinch. :)
  • This isn't something i cooked at home but I just had a lentil broth bowl from Panera and it was amazing! It had quinoa, lentils, kale, and a hard boiled egg. The broth was awesome! Highly recommend. Not gonna lie...I also got a brownie but at least my dinner was healthy lol!

  • Ok I know this is old but I have the easiest crockpot roast recipe and we made it this week and I decide I should share.
    This is to be for a 3-5 lb roast
    (use the little paper envelope pkgs)

    1 pkg. Italian seasoning
    1 pkg. ranch dressing
    1 pkg. brown gravy

    Mix together then add 1/2 cup of water mix an pour over your roast. Cook on low 6-8 hours.

    I usually try to make this on days I am not home during the day because it makes your house smell so delicious. Also as a FTM we always have leftovers which make pretty fantastic French dip sandwiches.

    @finchfeeder80 I have started picking up some of the Amy's soups for lunch and crackers and that has gotten me out of my lunch rut of eating out all the time. I like the French country vegetable and black bean veggie soups best.
  • @esampson1983 I love all of the Amy's line of products! I actually don't eat out for lunch very often at all (thankfully). We've been slacking in the dinner department, which has led to a few more take out dinners (and a few too many pounds on the scale this month!!) than is our usual. I just feel bad sometimes about eating frozen dinners all the time for lunch. Especially with the sodium levels in all of it. I haven't had any swelling issues yet, but I know as we get further along and the temps creep up, I'm going to need to keep an eye on it.

  • The quickest thing i made this week was fajita style quesadillas! Super yummy, you get some veggies in and i also added ground beef for protein. Super cheap too!
  • I just found some new recipes and tried them out last week!!

  • I think this list just changed my life... One Pot Pasta Dishes: https://m.huffpost.com/us/entry/6712998

    DH, our usual chef, announced today that he did not feel like cooking OR cleaning. (Our rule is whoever cooks, the other cleans.) But I didn't feel like going out - so I made #1 and agreed to clean the pot :-)

    I am normally a terrible cook, but both DH and I thought it turned out really well! Will definitely be trying the others and making this again
