test says 3 weeks, last AF 5 weeks ago?

  I've never heard of doctors giving dates off of blood work. Wait until your dating ultrasound and go off that.
  The only other way to know when you ovulated would be if you were temping.

  When baby is 3 weeks old/from conception, yes you are considered 5 weeks pregnant. Levels cannot tell you how far along you are as they can vary widely. You are pregnant, around 5 weeks most likely going by your LMP.
